Strawberry-Mango Grilled Paleo Chicken Salad

Wow, we’re already at the end of August and quickly turning the corner toward fall!

I don’t know about you, but I’m going to savor these last few weeks of summer.

Not because I love the heat. Believe me, here in Arizona we start wishing for fall in early July!

But I do love all the late summer fresh produce piled high in our grocery stores and farmer’s markets right now.

I was inspired to make this easy paleo salad recipe when the Hubs brought home a couple of ripe mangoes last week. They were so sweet and juicy, I just had to come up with the perfect salad for them.

I added strawberries, avocado and a little red onion to make this paleo salad a really tasty ensemble. For the protein, I decided a few pieces of grilled chicken generously seasoned with my Everyday Seasoning Salt would be perfect. The seasoning adds an extra savory kick to the chicken without overpowering the natural sweetness of the fruit.

I drizzled everything with my favorite honey-lime vinaigrette, and sprinkled this colorful creation with slivered almonds to add a little extra crunch.

I love summer meals like this one! They taste so good and they’re super easy to whip together.

This would be a really easy paleo recipe to serve at your Labor Day BBQ. It’s a delicious way to say farewell to summer and it’s a guaranteed crowd pleaser.

Strawberry-Mango Grilled Paleo Chicken Salad Recipe

1 1/2 lbs Boneless chicken breasts

Everyday Seasoning Salt (to taste) Link:1 1/2 cup Fresh strawberries, sliced

1 1/2 cup Fresh mango, diced

1/4 cup Red onion, sliced

1/4 cup Slivered almonds

1 Avocado, pitted and sliced

Approximately 8 cups of salad greens, your choice (I used an arugula-spinach blend)

Honey-Lime Vinaigrette

1/4 cup +2 Tbsp Avocado oil

2 Limes, juiced (about 4 tablespoons total)

2 tsp Dijon mustard

2 tsp Raw honey

1/2 tsp Garlic powder

Salt & Pepper, to taste


Vinaigrette Directions

1Add all the vinaigrette ingredients to a small mixing bowl. Stir well to combine and set aside

Salad Directions

1Season both sides of uncooked chicken breasts with Everyday Seasoning Salt (or another seasoning blend of your choice). Next, lightly drizzle both sides with olive oil

2Pre-heat grill to medium to medium-high heat. Oil grill grate, place chicken breasts on grate, and cook about 5-7 minutes per side. Chicken is done when internal temperature reaches 165ºF

3In a medium salad bowl, add salad greens, diced mango, sliced strawberries, and sliced red onions. Mix lightly to combine

4Add honey-lime vinaigrette as desired, and garnish with avocado slices and sprinkle with slivered almonds


Cranberry-Pecan Paleo Chicken Salad To-Go

When you’re rushing around and need to create a paleo meal on the fly, this quick and easy chicken salad is the one to try!

This one’s real simple. To start, you just need some shredded chicken (mine was from a leftover rotisserie chicken).

Then add a few things you probably have in your cupboard right now – dried cranberries and some chopped pecans.

Next chop up some fresh green onions and a celery stalk.

And finally, mix it all together with a dash or two of salt and pepper, a squeeze of lime, and some paleo-approved mayo – I grabbed my cold jar of Primal Kitchen Avocado Oil Mayo (check it out, you’ll love it!) And just like that, your easy paleo lunch is ready to fly out the door.

Since I meal prepped this lunch right in the bento box the night before, it stayed chilled in the fridge until I was ready to head out. I just slipped it into the insulated bag in the morning, and off I went. Lunch was still nice and cool by noon – and let me tell you, it was quite the conversation piece in our lunch room!

This would be a great way to pack a lunch for your school-aged kiddos too. (It keeps the different foods from touching – yes I was one of the kids!) Oh, just a final word on the paleo chicken salad – feel free to jazz it up however you like! I really loved the tart cranberries and crunchy pecan combo you’ll see in this paleo recipe. But you could also add apples or grapes to really jazz it up.

Cranberry-Pecan Chicken Salad To-Go Recipe

2 1/2 cup cooked chicken, shredded

1/3 cup (or more to taste) paleo mayo (I used the Primal Kitchen brand)

1/4 cup cranberries, dried

3 green onions, chopped

1 celery stalk, chopped

a squeeze of lime

salt and pepper, to taste


1Combine all chicken salad ingredients in a medium bowl, and gently mix together (adjust seasonings to suit your taste)

2Serve over lettuce, in a tomato cup, or as a sandwich
