You know me, I love to keep things simple.
Here’s a delicious example…a freshly-tossed paleo salad that starts off real easy with pre-cooked chicken.
This one is ideal for leftover chicken you might have from another meal, canned chicken if that’s what’s on your shelf, or you could even use shredded pieces from a store-bought rotisserie chicken.
Once you’ve got your chicken figured out, just put your hard-boiled eggs, apple, cucumber, avocado, and red onion on the chopping block and go to town.
You can choose whatever paleo dressing you like, of course, but I really love the three-ingredient vinaigrette included with this recipe. It’s a simple combo of honey, Dijon mustard, and apple cider vinegar. Just stir the ingredients together in a small bowl and you’ve got a sweet little vinaigrette that’s the perfect topper for this fresh salad.
By the way, you can easily adjust the vinaigrette to suit your individual taste. If you don’t want it quite as sweet, just use less honey and add more mustard instead. Simple!
Just so you know, I arranged this salad in neat little rows for the photo so you can easily see the ingredients. Normally I’d toss everything into a large bowl and mix it up before serving.
