Raspberry, Banana & Coconut Water Ice Cube Smoothie

Here’s a light and refreshing paleo smoothie that really hits the spot when you need a quick and healthy thirst-quencher…

We got back from a bike ride in the hills this morning a little over-heated, so I whipped up one of my favorite ice-cold smoothies to cool us off.

The trick to this delicious concoction is keeping an ice cube tray or two of frozen unsweetened coconut water in your freezer so you can pop out the cubes and make this drink whenever you want to. [av_sidebar widget_area=’Lockerdome’ av_uid=’av-213ypm’]

This smoothie is loaded with potassium and other electrolytes from the banana and coconut, so it’s a tasty way to rehydrate after a good workout.

You should really try this one. I’m not a big fan of coconut water straight up, but when it’s mixed in with all the tasty goodness in this smoothie, I love it!

Freeze some coconut water and drink up!

Raspberry, Banana & Coconut Water Ice Cube Smoothie

Ingredients

  • Unsweetened coconut water ice cubes
  • 1 ripe banana
  • 1/2 cup of raspberries
  • 1/2 tsp of vanilla
  • Lime, just a squeeze
  • Yield:
  • One tall smoothie

Instructions

  1. Freeze unsweetened coconut water in an ice cube tray
  2. Use 6-8 coconut water ice cubes per serving
  3. Place all ingredients in a blender, Bullet, or similar mixer
  4. Blend until smooth
