Ready to wake up your sleepy tastebuds?
Yes, this easy paleo breakfast sausage recipe means you’ll need to rise and shine a little bit earlier than usual in the morning, but in my humble opinion, for a special breakfast, it’s totally worth it!
Now I know with all the pre-made sausage patties and links out there, it’s easier to slap those on the griddle and call it good.
Trouble is those factory-formed (and often frozen) sausages usually come with a lot of additives and preservatives you don’t really need.
Plus, I just don’t think any of those assembly-line links have a whole lot of honest-to-goodness flavor. At least not compared to the real thing you’ve made fresh from all-natural ingredients and spices.
And the aroma of these while they sizzle on your kitchen stove is unbelievable! Trust me, all the usual breakfast-skippers in your house will make an exception for these!
I think everything is pretty well spelled out in the recipe below. Just put a pot of coffee on first and give yourself a little extra time to make these.
I would point out the seasoning mix is one thing you could easily whip up beforehand and have ready.
You could also slice and dice the onions and apples the night before to save time. Just place the pieces in separate plastic baggies. Squeeze the air out of the bag with apples to prevent browning, or try sprinkling the pieces with some lemon juice.

Enjoy!

Start with the tablespoon of coconut oil in a skillet over medium heat. Add the diced onion and saute for about 3 minutes
Next, add the diced apple to the hot pan and cook an additional 3-4 minutes, or until apple pieces are slightly tender
Remove skillet with onion and apple from heat and set aside
In a small bowl combine all the dry seasoning ingredients and mix well
In a large bowl, add uncooked pork sausage, the maple syrup, the seasoning mix, plus the sauteed onion and apple from the skillet. Gently mix everything together and form into 2" or 3" patties
Next, add a splash of coconut oil to the pan and heat to medium. Place sausage patties in skillet and cook about 3-4 minutes per side, or until patties are thoroughly cooked through (160ºF internal temperature)
