Paleo Breakfast Hash Brown Sliders

Here’s a delicious stack ’em high paleo breakfast when you wake up with a Paul Bunyan-sized appetite and really want to jumpstart your metabolism for the day. 

There’s nothing dainty about this one my friends. It’s lots of grub, all paleo, very easy to make, and wow is it tasty!

Now for all you breakfast nibblers or even skippers, consider this: starting your day with a healthy breakfast loaded with protein, healthy fats and some carbs may actually help you shed a few pounds…providing you ease up on your lunch and dinner.

In a 2013 study published in Obesity magazine, overweight women participants were divided into two groups. The first group ate a big breakfast and a lighter dinner. The second group ate a lighter breakfast and heavier dinner. Both groups consumed the same number of calories each day. After 3 months, the women who started their day with a big breakfast lost significantly more pounds and inches than the study’s lighter breakfast participants. Interesting huh?

And one more factoid from the study: the heavier breakfast eaters reported feeling less hungry and more satisfied the rest of the day. [av_sidebar widget_area=’Lockerdome’ av_uid=’av-ur1mla’]

Before I switched to paleo, I was in the light or no breakfast camp myself. Now I routinely eat a healthy, decent-sized breakfast before heading off to work, and I can really tell the difference. A good morning meal keeps me evenly fueled without the carb cravings I used to have.

So enough with the science, let’s get cooking!

This big breakfast is super easy – and you probably have everything you need already.

Hash browns are one of my breakfast faves. I made these slider patties with a white-flesh sweet potato, but feel free to go with a yam if you like. All it takes is a little grating of the potato and onion, plus a whisked egg and a little coconut flour to bind them. Add any other spices you like and then cook them up – just make sure your pan is not too hot or they may turn out a bit crispy.

Then stack these bad boys up with with some bacon, an egg (any style you like) and guacamole or just avocado slices.

When you’ve got a lumberjack’s appetite and a little extra time, this is one healthy, hearty and easy paleo breakfast you don’t want to skip!

Paleo Hash Brown Slider Recipe

Yield: 3-4 Hash Brown Sliders

Ingredients

    Hash Brown Pattie Ingredients
  • 1 medium raw sweet potato, shredded
  • 1/4 cup onion, shredded
  • 1 egg, whisked
  • 1 tbs coconut flour
  • Salt & pepper to taste
  • Any other seasonings of your choice
  • Other Ingredients
  • 1/2 lb bacon, cooked (about 8-12 average slices)
  • 3-4 eggs, fried or scrambled
  • Guacamole or avocado slices

Instructions

    Step One – Fry Bacon
  1. Cook bacon strips, and set on paper towel to drain
  2. Reserve bacon fat
  3. Step Two – Cook Hashbrown Patties
  4. In a mixing bowl combine shredded sweet potato, shredded onion, whisked egg, coconut flour, and salt and pepper. Add any additional seasonings as desired.
  5. Lightly hand mix
  6. Form into 6-8 round patties
  7. Cook patties in bacon fat over medium to medium heat (not too hot!) about 4-5 minutes per side, or just until tender and light golden brown
  8. Set aside patties
  9. Step Three – Fry or Scramble Eggs for Each Slider
    Step Four – Build Sliders
  10. Start with one hash brown pattie
  11. Add a layer of guacamole or avocado slices
  12. Top with bacon
  13. Add a fried or scrambled egg
  14. Top with another hash brown pattie
