Have you mixed up your own breakfast sausage before? I’m new to it, but I decided after a year of being paleo it was time to give it a go…

Well, here’s the great news: it was soooo easy! Not as simple as reheating the store-bought kind of course, but the beauty of it is you can make your sausage exactly the way you like it. Spicy, sweet, savory…it’s all up to you! What took me so long?

I added a little maple syrup to this recipe just because I love the flavor. You can leave it out just as easily if that’s not your thing. Or really go for it and add an extra spoonful!

So why bother making your own when Jimmy Dean has already done it for you?

Because with all paleo cooking, YOU get to control the ingredients. There’s no strange additives or funky preservatives in home-cooked sausage. Just wholesome goodness and awesome flavors.

You know I like to make food in advance and store it for later. You can easily do that with these puppies – just season them up, form the patties, and freeze them. They’ll be ready and waiting for you whenever you want to cook them up.

In fact, I plan on taking a hard-boiled egg and one of these tasty little sausage patties with me to work tomorrow. Who said eating breakfast at work has to be boring?

It’s really not that hard to eat healthy when you plan ahead. That’s a key point with eating paleo. Change your mind set, and great food will follow. It makes life so much easier, and more importantly, helps you stick to your personal paleo plan.

Paleo Pork Breakfast Sausage Recipe

Ingredients

  • 1 lb bulk pork (or chicken)
  • 2 tbs pure maple syrup
  • 1 tsp fennel seeds
  • 1 tsp salt
  • 1/2 tsp ground pepper
  • 1/2 tsp sage
  • 1/2 tsp onion powder
  • 1/2 tsp allspice
  • 1/4 tsp garlic
  • 1/4 tsp cayenne
  • A little coconut oil to fry the patties
  • Makes about 8 sausage patties

Instructions

  1. Add pork (or chicken) to a mixing bowl
  2. Sprinkle in all the above seasonings and the maple syrup
  3. Mix everything together with your hands
  4. Form 2 to 3-inch radius patties
  5. Add a little coconut oil to a frying pan and set to medium heat
  6. Place patties in pan and fry about 3 to 4 minutes per side or until meat is cooked through
  7. Serve sizzling hot with eggs and enjoy!
