Paleo Bacon-Wrapped Chili Chicken Skewers

You know what I love? The same thing you do of course – easy recipes that give you a delicious paleo and gluten free meal…

Here’s one of those, hot off the grill for you…

This chicken skewer recipe is a tasty spin-off of a really simple chicken wing recipe I came up with earlier this year.

For this one I added bacon, because duh, it raises grilled chicken to a whole new paleo level.

For those of you who like your chicken with a little more heat and meat, this one’s for you. It’s a little sweet with a spicy kick to it, and the bacon wrap sends the savory flavor over the top.

And, it is so not complicated to prepare. That’s my favorite part!

While you’re waiting 30 minutes or so for the chicken marinade to soak in, you’ve got plenty of time to prepare a fresh salad or slice up some veggies to grill.

And that’s it, you’re as good as done! Simply said, paleo CAN be simple!

We enjoyed these skewers with a salad because I like to balance sweet and spicy with cool and tangy…but you can go with sweet potato fries, or whatever side dish you like.

It’s the perfect backyard summer meal. Pair the chicken skewers up with a cold beverage and good times with your crazy family or hungry friends, and you’ll have everyone smiling – including yourself.

Paleo Bacon-Wrapped Chili Chicken Skewers Recipe

Ingredients

  • 1 lb chicken breasts, cut into strips
  • 8 oz of uncooked bacon
  • 1/4 cup honey
  • 1/4 cup coconut aminos
  • 2 tbs of Sriracha Hot Chili Sauce
  • Salt and pepper to taste
  • Green onions chopped for garnish
  • Yield
  • Makes about 9 skewers

Instructions

  1. Soak wooden skewers in water for about 20 minutes
  2. In a small bowl, whisk together honey, coconut aminos and Sriracha
  3. Remove 1/4 cup of the mixture and set aside for basting
  4. Season chicken with salt and pepper
  5. Place the chicken strips in the sauce mixture and marinade for 30-60 minutes in refrigerator
  6. Preheat your grill – set to medium or medium-low heat
  7. Thread the marinated chicken firmly on the skewers
  8. Wrap each skewer with one piece of uncooked bacon
  9. Grill 5 minutes or so per side. Avoid excessive heat; you want the chicken to cook through without burning the bacon wrap. Baste often while grilling with the sauce you set aside.
  10. Serve hot and enjoy
