Easy paleo lunch – Stuffed Avocado with Bacon, Chicken & Tomato

Here’s a really simple lunch idea for you…kinda like a paleo BLT without the bun.

Well, except there’s no lettuce either…but it’s still a BLT in spirit!

This one’s so good. Extra healthy. And really, really easy.

Start with a little chicken – grilled, rotisserie, leftovers – grab whatever kind you’ve got handy. Then just cut your chicken into cubes.

Next add some bacon, tomato and green onions. And then a dollop or two of paleo mayo  – we had a jar of Primal Kitchen Avocado Oil Mayo in the fridge, or here’s my easy recipe to make your own paleo mayo. [av_sidebar widget_area=’Lockerdome’ av_uid=’av-io8tt4′]

Then you just fold everything together in a little mixing bowl, slice and de-pit some avocados, and lunch is served!

Easy, simple and healthy – loaded with protein and good omega-3 fats.

Easy Paleo Bacon, Chicken & Tomato Stuffed Avocado Lunch Recipe


  • 2 chicken breasts, grilled
  • 2 avocados
  • 1/3 cup chopped grape tomatoes
  • 2-3 strips cooked bacon, chopped
  • 2 green onions, chopped
  • 1/4 to 1/3 cup of a good paleo mayo


  1. Season chicken as desired, grill, and cut into cubes
  2. Place cubed chicken in a medium bowl. Add tomatoes, onions and bacon
  3. Add paleo mayo and gently mix everything together
  4. Just before serving, slice avocados in half and discard pit
  5. Pile the chicken, bacon, tomato mix on top of each avocado half and enjoy!
