This recipe has been a big hit because even without the pasta and cheese, it tastes like honest-to-gosh baked lasagna.
Being part Italian and growing up loving and cooking traditional Italian food, I had my doubts this recipe would turn out when I first came up with it last year. But I got lucky or something…it’s really a terrific paleo lasagna. In fact, I’ve received many nice compliments from paleo cooks telling me how surprisingly good it is – well no one’s more amazed than me, that’s for sure!
