I was craving something a little different for breakfast and started thinking about some of the fast food breakfast sandwiches I used to grab at the drive-thru…
Basically, they were eggs, hash browns, Canadian bacon, and an English muffin. I’ll admit, I loved those sandwiches. But they’re not on the menu in our house anymore.
So I decided I would make my own healthy version, Paleo style. I would even make the egg and sweet potato fritter perfectly round, just like the fast-food joints.
I always wondered how they did that. The answer is egg rings. Little rings you put in your frying pan so you can make a perfect egg, pancake or sweet potato fritter.
Is it worth your time fiddling with an egg ring? Maybe if you have guests you want to impress. I wanted ours to look good for the photos, but I found them kind of a pain to use. Just hand-form your fritters and fry up an egg freestyle, and it will taste 100% the same. Delicious!
These Paleo Breakfast Stacks are wonderful. You can go all out and make yourself a Paleo breakfast sandwich with a paleo pancake standing in for the muffin. Or, just keep it simple and delicious like we did with just the sweet potato fritter, bacon, and eggs.
I guarantee this one will be awesome, any way you stack it!

Paleo Breakfast Stack Recipe
Ingredients
- 1 large sweet potato
- 1/3 cup chopped onion
- 1/3 cup chopped red pepper
- eggs- 2 for the fritters then 2 per person fried for the stack
- Canadian Bacon – we used 2 slices per stack
- 2 Tbs olive oil for the fritters plus whatever fat you would like to fry them in
- salt and pepper to taste
- dash of cayenne or paprika for extra seasoning – optional
Instructions
- Chop red pepper and onion
- Saute pepper and onion on medium heat until onion is translucent – about 5 minutes
- Peel and shred you sweet potato by hand with a grater or in a food processor. I used 1 large potato which made about 4 cups shredded – enough to make about 6 large fritters.
- In a medium-size bowl, add 2 eggs, raw shredded sweet potato, sauteed onions and red pepper
- Season with salt and pepper, plus any other seasonings you would like. We added some cayenne for a little extra kick.
- Mix everything together with your hands
- Heat your stovetop burner to medium. Stovetop temps vary – adjust lower or higher. You just don’t want the heat too high – it will burn the outside of the fritter and it will not be cooked all the way through. Also, make sure you have plenty of oil in the pan.
- Form fritters into patties
- Fry fritters until golden on one side, then flip and cook the other side. About 5 minutes per side.
- Fry your canadian bacon
- Next cook your eggs any way you like them, fried or scrambled – we did sunny side up
- Now stack those puppies up! Sweet potato fritter first, the Canadian bacon next, and finally top with your eggs!
- Grab a fork and knife, and enjoy!
I tried these the other day. Super easy to make and delicious. I also found I was full fr ages. My biggest downfall is snacking between meals. But it was well past 1 pm when I realized I hadn’t eaten since breakfast. Yummy! Thanks for posting the recipe.

Do you think the fritter batter would last long in the fridge? I live alone and wouldn’t be able to eat 6 fritters in a day!
Holly, I would just make them up and freeze a few of them. They thaw just fine, but I do admit they are best fresh. :)
