My 3 Favorite Things from Taste of Paleo

We recently traded the heat of Arizona for the cool breezes of Huntington Beach, CA to attend the Taste of Paleo food festival…

Here are my three favorite things from our Taste of Paleo weekend:

My BFF Bonnie!

1. Bonnie.

This California cutie’s been a friend since we were teenagers. Won’t say how old we are now…just old enough to know better, right Bonnie?

I love her to the moon. Especially because she drove over an hour to be with us and wore a Paleo Newbie tank top without a single complaint.

You can see she looked so adorable wearing it too!

Thanks for coming Bonnie…I miss you already.
 
 

Healthy snacks from The YES Bar…oh yes!

2. Coffee Cayenne snack bar from The YES Bar.

Wow. I can’t even tell you how great these gluten and GMO-free bars are. A tiny bit spicy with a hint of coffee flavor and loaded with nuts and other goodies. Crazy awesome! It’s my favorite treat from Taste of Paleo. Abigail Wald, The YES Bar founder, also has a chocolate macadamia nut version that’s just as tasty. We bought a 6-pack, and my only regret is I didn’t grab more! Not only because these are totally awesome, but because Abigail was so friendly and gracious with her time. A big Paleo plus in my book. I’ll be ordering more from The YES Bar website – check it out!

Mmm…Paleo sliders with homemade Tomato Jam…awesome!

3. Tomato Jam.

What?! Yes. I had never heard or tasted it until our trip to Huntington Beach. We came back to the hotel after the Taste of Paleo event around dinner time, and just wanted a little something. Our server suggested the beef sliders with tomato jam. My hubby and I looked at each other like, what? Tomato Jam? She said trust her. We did. They were served protein style of course, but once we took a bite I was hooked. It’s like a sweet and spicy tomato chutney. that’s the only way I can describe it. Heavenly.

I just knew I would try to make a paleo version. It’s great on everything. Burgers, meatloaf, savory biscuits. You name it. I’m just upset it took my whole life to discover it was out there!

Well now it’s here for you too! The tomatoes are so good right now. Make it and enjoy. The taste is like a sweet spicy ketchup times 100. You may never go back to ketchup again!

Paleo Sweet & Spicy Tomato Jam Recipe

Paleo Sweet & Spicy Tomato Jam Recipe

Ingredients

  • 1 1/2 lb Roma tomatoes, diced (about 6-8 tomatoes)
  • 1/2 of a red jalapeno pepper, seeded and minced
  • 3 tbs raw honey
  • 1 tbs of cider vinegar
  • 1/4 tsp ground black pepper
  • 1/4 tsp of ground mustard
  • 1/4 onion powder
  • 1/4 tsp allspice
  • 1/4 ground cumin
  • 1/4 tsp of cayenne pepper, optional

Instructions

  1. Combine all ingredients in a medium saucepan
  2. Bring to a boil over medium heat, stirring often
  3. Reduce heat and allow to simmer about 1 hour
  4. Taste and adjust seasonings as desired
