These take just minutes to prepare…

All you’re really doing is running some shrimp around a hot skillet – for the rest you’re just grabbing some pre-made guac, salsa and a bag of gluten-free chips.

Quick Shrimp Tostada Bites

Ingredients

  • 1 pound shrimp, peeled and deveined
  • 2 Tbsp ghee or olive oil
  • 2-3 tsp Chipotle Seasoning Mix
  • Tortilla chips (we used gluten-free)
  • Pre-made Guacamole
  • Pico de Gallo or similar salsa
  • Lime juice
  • Fresh cilantro, chopped

Instructions

  1. Clean shrimp and pat dry. Season with Chipotle Seasoning Mix plus salt & pepper to taste
  2. Heat ghee or olive oil in a large skillet over medium heat. When hot, add shrimp and cook just until opaque – about 2-3 minutes per side. (Sprinkle with more Chipotle Seasoning Mix while cooking if desired.) Remove shrimp, lightly sprinkle with lime juice, and set aside.
  3. Add a dollop of guacamole to each chip, then a spoonful of salsa, and finally top with a shrimp. Garnish with fresh cilantro. Serve with lime wedges for extra flavor. Enjoy!
