Paleo Stacked Smoked Salmon Appetizer

Uh-oh, unexpected VIP guests have just dropped by and you need a fancy appetizer pronto! No need to panic – 10 minutes and a can opener are about all you need.

Yes you really can build a beautiful paleo appetizer stacked with layers of fresh guacamole, smoked salmon and mango-pineapple salsa like this one in minutes – all without breaking a sweat.

What’s the secret? An empty tin can!

All you have to do is carefully remove both the top and bottom lids with a can opener and you’ve got the perfect mold for this appetizer. I used a low-profile, 8-ounce, empty pineapple can – but anything similar should work just fine for you.

All you do is center the empty tin can on a small plate and start building up those colorful layers inside it one-by-one. Just one small tip – be sure the salmon is pushed all the way to the outer edges before lifting the can off your creation.[av_sidebar widget_area=’Lockerdome’ av_uid=’av-u7tesw’]

I loved everything about this particular combo…the creamy, cool bottom layer of fresh guacamole topped with the smokey flavor of salmon and then the sweetness of a fruit salsa – it all went together perfectly, and looked amazing too. A handful of microgreens and edible flowers on top took this one over the top.

But you may want to go crazy and come up with completely different layers for your own signature appetizer…the possibilities are practically endless. Just use your imagination and have fun experimenting!

If you’re hosting a party in the near future, start saving your tin cans now. With enough molds, you can make a bunch of these appetizers ahead of time. Just place a mold on each plate, build the layers up inside, and then just leave the cans in place and store your plated appetizers in the fridge. When the time comes to impress your guests, all you have to do is lift off the cans, garnish each appetizer, and wait for the applause.

Yield: Serves 2

Paleo Stacked Smoked Salmon Appetizer Recipe

Ingredients

  • 4 ounces smoked salmon
  • 1 avocado (large) or pre-made guacamole
  • 1/2 cup pre-made mango salsa
  • Microgreens/edible flowers – optional garnish

Instructions

  1. Mash the avocado in a small bowl and season with salt, pepper, powdered garlic or whatever you want
  2. I turned a clean empty tin can with the top and bottom lids removed into a mold to easily shape the appetizer's layers.
  3. Set your mold in the middle of a small plate. Start with a bottom layer and add the avocado mixture, followed by the smoked salmon, and finally the mango salsa layer on top. Carefully lift the mold straight up. Rinse mold and repeat procedure for the second serving.
  4. Garnish as desired with microgreens.
