Paleo Barbecue Pulled-Pork Sliders

Coming down with a good case of spring fever? Can’t wait to get a taste of summer barbecue but the weather’s still a touch too cool to fire up the grill?

This recipe could be the answer. It’s a super-easy slow-cooker barbecue pulled pork, and we even created a small paleo and gluten-free bun to pile all the flavorful goodness on. After all, what’s a pulled pork slider with out its cute little bun?

We simply put a pork butt in the crock pot all seasoned up on a bed of chopped onions with a little barbecue sauce on top. You let it cook all day, drain the liquid (I strained it and added the onions and a cup of the strained liquid back into the mix) and shredded the pork. Then you just put the pork you shredded back into the crock pot with a cup or two of barbecue sauce and let it cook for another 30 minutes. That’s about it – so easy.

The Paleo Buns Recipe* is also a breeze. You all know by now, I try to keep it as simple as possible. The slider mini-buns are about 3 to 3 1/2 inches a round and make 6 buns. You could always make them larger if you want and get about 4 buns out of the recipe – just be sure and add a few more minutes to the cooking time. *(Keep in mind these buns are more like biscuits and not light and fluffy wheat buns…but good enough to hold your slider.)

Let’s just say my hubby and I really enjoyed this succulent little slider. Sweet and smokey with a little kick. You can certainly turn up the heat on the BBQ sauce if you like by adding a little cayenne or chipotle. I know BBQ sauce is very subjective – everyone’s tastes are so different. But like most Paleo Newbie recipes, you can easily adjust the sauce to your liking. [av_sidebar widget_area=’Lockerdome’ av_uid=’av-22qo3i’]

So when everything was ready we piled the pork high and dug in! I added sliced avocado to mine because that’s just how I roll. A little slaw on top would be a nice touch too.

Paleo Barbeque Pulled-Pork Sliders Recipe

Ingredients

  • 2 - 2 1/2 lbs of pork shoulder or pork butt
  • 1 medium onion, chopped
  • 1 tbs chili powder
  • 1 1/2 tsp salt
  • 1 tsp of garlic powder
  • 1 tsp of onion powder
  • 1 tsp of fresh ground pepper
  • 1 tsp of cumin
  • 1 tsp of smokey paprika
  • 1/2 tsp of cayenne

Instructions

    BBQ Sauce & Buns Prep
  1. Make our Paleo Barbecue Sauce Recipe or use your favorite
  2. Make our Paleo Buns Recipe for sliders, if desired
  3. Pork Crock Pot Cooking Instructions
  4. Set your crock pot to low
  5. Chop onion and add to crock pot
  6. Combine all dry spices above into a small bowl
  7. Rub spices on all sides of the pork roast
  8. Place pork roast into the crock pot
  9. Pour about 1 cup of barbecue sauce over the pork roast
  10. Cook about 6 to 8 hours (it will look like there is not much liquid in the crock pot as it begins to cook – the pork will slowly add its own juices to the liquid)
  11. Remove pork from crock pot
  12. Scoop out loose onions and set those aside
  13. Strain remaining liquid – you should end up with 1-2 cups of strained liquid
  14. Shred pork and place back into empty crock pot
  15. Add the the cooked onions you set aside and pour the strained liquid back into the pot
  16. Next add 1 to 1 1/2 cups of barbecue sauce, stir and let simmer in crock pot about 30 minutes
  17. Place pork on paleo buns if desired
  18. Top meat with extra barbecue sauce if desired
