This easy little paleo recipe combines two of my favorite savory and sweet flavors in a hot-out-of-the-oven breakfast treat.
I got the idea for this bacon-apple muffin when my friend was broadcasting on Periscope from Taste of Paleo in California. He was walking along the row of vendor booths and came across one selling paleo apple-bacon granola. He zoomed in on the sample jar – and there was nothing left but crumbs. No surprise there…bet that granola was awesome!
I’m inspired to create recipes from random moments like this. Sometimes it’s a friends lunch, a recipe in magazine or just browsing the shelves at Whole Foods. You never know what will spark an idea – even an empty jar of granola.
So I thought why not try to combine bacon and apples in a breakfast muffin!
These in my opinion are the perfect match of salty and slightly sweet. And the added fall spices just enhance the flavors even more.
