Need a little salty and sweet pick-me-up treat to get you through the day with a smile?
You’re busy…working hard…getting kind of hungry…and a handful of nuts, a dry slab of beef jerky, or raw veggie sticks just doesn’t sound all that appealing…
Well how does this grab you: No-Cook 10-minute Cashew Nuggets!
This is a simple, gluten-free recipe with a sweet reward – in minutes you can whip together a much healthier version of something that tastes a whole lot like a PayDay candy bar.
And bonus, there’s only a tablespoon of raw honey in the whole batch. Just don’t over indulge – there’s a good bit of sunflower seed butter in these. [av_sidebar widget_area=’Lockerdome’ av_uid=’av-22ixq0′]
I love (or I should say used to love) PayDay candy bars. I really like the taste of salty and sweet together.
That’s what inspired me to come up with this easy recipe. And to me, it’s the peanut-like flavor these have that really put them over the top.
Take a little break and make these golden nuggets of goodness…guaranteed to put a smile on your face! :)
Enjoy!
Ingredients
- 1/4 cup of sunflower seed butter (we used Trader Joe's brand)
- 2 tbs of coconut oil, softened
- 2 tbs of coconut butter
- 1 tbs of honey
- 1/2 tsp of pure vanilla
- 1/8 tsp of salt (taste mixture without salt first to be sure it needs it)
- 1 cup of cashew pieces
Instructions
- In a mixing bowl, combine ingredients above ( except the cashews )
- Once thoroughly mixed, stir in the cashews
- Line a shallow pan or baking dish with parchment paper (we used a 7" x 5" Pyrex dish)
- Spoon in mixture to form an even layer
- Place in freezer until mixture solidifies
- Serve and enjoy
- Keep refrigerated (these will melt at room temperature)
These look delicious! Is the Trader Joe’s sunflower seed butter sweetened?
This is a tasty little treat! You know, it’s been so long since I’ve purchased TJ’s sunflower seed butter, I don’t remember the exact ingredients. These days, I just make my own seed and nut butters fresh with my blender. :)
Nice! Do you use water to blend them or just the nuts? I haven’t tried that!
Just the seeds and a good blender is about all you need. If they don’t blend as well as you would like, you can add a tiny bit of coconut oil to make the sunflower seed butter creamier. Hope that helps Kristin :)
WOW!!! Much simpler than my Paleo Snickers! These are next on my list, but I’ll have to make a few adjustments. Thanks for getting my wheels spinning :)
Where do you find coconut butter?
I get mine on Amazon. :)
How tasty and great do these look?! I love that they look like a ‘normal’ treat
:) They are ‘normal’ and yummy! Give them a try. Super easy and good!
How big of a piece would you say is a serving size? Theses sounds very good.
About a 2 inch square.
Did you use raw or toasted cashews?
Judy, I used toasted because i was kinda trying to make a treat similar to a payday candy bar.
Can I use almonds instead of cashews? How about macadamia nuts (lightly roasted, no salt added)?
Sure! Either sounds awesome!
Chrissy, I allow cashews into my diet on occasion. I’m 90% paleo and this is just a fun treat. http://www.marksdailyapple.com/is-it-primal-8-foods-scrutinized/#axzz2rEZ5eu9H
Looks yummy!!
Cashews are not really Paleo??????
