Ham, Apple & Sweet Potato Scramble

If you’re like me, you’re always looking for a way to add a little extra pizzazz to a pan full of plain old scrambled eggs…

For me, that means paleo hash! I can’t get enough of the stuff! My favorite part of the deal is hash is perfect for any meal of the day…and you can always load it up with great flavors that will make your hash special every time.

Try this one and I bet you’ll be wishing you doubled the recipe!

Just imagine these flavors together: ham, sweet potatoes, and fresh, tart apples. Yummy!

But that’s not all…I added cinnamon, spice and everything nice to really push this one over the top…you’re going to love how all the different flavors come together in this one.

And when you use fresh, good quality ingredients, you’re pretty much guaranteed a successful dish.

You know, since switching to the paleo diet I can actually taste the yummy goodness in real food these days. It’s amazing how our taste buds become more attuned to the good stuff. I had a bite of chocolate cake at work this week. It was so sweet it almost made my teeth hurt. Not saying I don’t like sweets…now I just don’t see the need for them most of the time. You’ve probably noticed the same thing since starting your paleo lifestyle!

Real food just tastes better. And you can practically feel your body screaming with happiness…it makes it easy to never look back at wheat and processed foods again.

This recipe is a perfect example of great tasting paleo and gluten-free food made simple. Even non-paleoers will love it. And you can make it with or without eggs – it’s awesome either way.

Ham, Apple & Sweet Potato Scramble Recipe

Ingredients

  • 1/2 lb ham steak, chopped into cubes
  • 1 apple, peeled, cored, and diced
  • 1 medium sweet potato, peeled and diced into 1/4" to 1/2" thick cubes
  • 1/2 medium onion, diced
  • 4 eggs, scrambled
  • coconut oil, for sautéeing
  • Spices
  • 1/2 tsp salt
  • 1/2 tsp cinnamon
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/4 tsp allspice
  • 1/4 tsp cayenne pepper
  • Yield
  • Serves 2-3 meal-size portions

Instructions

  1. In a small bowl, mix all the spices together
  2. In a large frying pan, add a tablespoon of coconut oil and heat to medium
  3. First sauté the onions 3-4 minutes and leave them in the pan
  4. Add the sweet potatoes to the onions along with more coconut oil and cook for about 5 minutes
  5. Next add the ham, apples and mixed spices to the pan
  6. Continue cooking until the sweet potatoes and apples are tender - remove everything from the pan and set aside
  7. Now scramble the eggs in your frying pan, then add everything you set aside back in and mix it all together
  8. Serve hot and enjoy!
