As most of the U.S. eases into summer, here in Phoenix we’re already there. Yep, triple-digit temperatures are expected this weekend. So I thought a cool, bite-size, gluten-free treat was in order…
These little nut butter filled frozen banana sections dipped in dark chocolate are perfect for a poolside party or as your own little reward after a great workout.
They give you a cool creamy burst of nutty goodness, surrounded by sweet banana and coated with your favorite chocolate for a nice crunch. Of course with all treats like this, you’ll want to enjoy these in moderation. [av_sidebar widget_area=’Lockerdome’ av_uid=’av-2wthrp’]
Seriously. What more could you want to satisfy your sweet tooth? And with only 3 ingredients, these are really easy and a lot of fun to make.
You can store these in either the fridge or freezer – the nut butter inside will stay nice and creamy either way. I plan on keeping these handy all summer long!
When you whip these up you can use any kind of nut butter you like to fill the centers. We chose sunflower butter because it tastes the most like peanut butter.
And buy the largest, thickest bananas you can find – that’ll give you enough room to hollow out the middle of the banana for the nut butter and still have a thick enough outer shell to dribble on a nice coat of melted chocolate.
Your kids will love making these banana bites with you. They’re kinda messy, but guaranteed to be finger-lickin’ good! They’re a great family treat!

Ingredients
- 4 large bananas, straight cut into 1" sections and hollowed out with an apple corer
- About 12 ounces of melted dark chocolate (pieces or chips)
- About 3/4 cup of nut butter – your choice (hazelnut, cashew, almond, etc. – we used sunflower butter)
- Makes 20-25 chocolate banana bites
Instructions
- Slice bananas into about 1" sections, cutting as straight across as possible
- Next, core each banana section so the center is hollow
- Line a cookie sheet with parchment or wax paper
- With a teaspoon, fill each banana center with your favorite nut butter
- Place filled bananas in freezer for about 30 minutes
- In a small saucepan over low heat, melt chocolate – stir until melted,then remove from heat
- Remove filled bananas from the freezer
- Place each filled banana section on a fork and hold it over the saucepan
- Spoon melted chocolate over to coat all sides and letting the excess chocolate drip through the fork and back into the pan
- Set each coated banana section upright on cookie sheet, and place in freezer
- Allow to chill 30-60 minutes
- Remove and enjoy!
