Italian Sausage & Potato Quick Skillet Meal

Y’know, when I first started cooking paleo meals a couple of years ago, what I really wanted were recipes that were super tasty, loaded with paleo and gluten-free goodness, and didn’t take a long time to make.

I know those aren’t always easy to find. Recipes that involve real food always take a little extra time. You can’t just grab something from the freezer and nuke it on high for 5 minutes.

But darn it, when I get home dog-tired from work I still want a healthy meal I can knock out in a half hour or less. [av_sidebar widget_area=’Lockerdome’ av_uid=’av-2h9gvu’]

We’re all busy enough right?  Who wants to spend hours in the kitchen preparing gourmet paleo meals if you don’t have to. Especially after you’ve had a tough day and the kids are screaming they’re starving.

Well here’s a delicious one-skillet wonder to the rescue! With a few veggies on hand and a package of pre-cooked sausage from your fridge, this one can go from pan to plate in about 30.

This quick skillet meal makes a great breakfast too! Just whip up a couple of scrambled eggs and top with the sausage and veggies.

You can still multi-task and listen to the kids tell you about their day at school while you prepare this no-brainer meal.

And before you know it you’ll be serving up a hearty and hot dish that makes everyone smile.

Real, tasty, savory food like grandma used to make – only faster and simpler. Especially great for all you “no time for this” moms out there who want to serve their families healthy meals and not waste any time doing it.

Italian Sausage & Potato Quick Skillet Recipe

Yield: Serves 3-4

Italian Sausage & Potato Quick Skillet Recipe

Ingredients

    Italian Seasoning Mix
  • 1 tsp basil
  • 1 tsp oregano
  • 1 tsp parsley
  • 1/4 tsp red pepper flakes
  • 1/2 tsp garlic
  • salt and pepper to taste
  • Main Ingredients
  • 1lb. package of pre-cooked sausage (Italian or whatever flavor links you like), sliced
  • 1/2 onion, diced
  • 1 red pepper, diced
  • 1 green pepper, diced
  • 2 small white sweet potatoes, peeled and sliced into thin circles
  • 1 zucchini, sliced into thin circles

Instructions

  1. First combine the dry seasoning mix in a small bowl and set aside
  2. Next brown the pre-cooked sausage slices in a large skillet with a little coconut oil over medium heat – transfer sausage to a plate and set aside
  3. Next add raw potato slices and a little more coconut oil to the hot skillet. Spread out potato slices along the bottom of the pan and brown on one side
  4. Next add the onions, peppers, zucchini and seasoning mix to the pan right on top of the potatoes – cook everything for about 5 minutes
  5. Now turn the potatoes and veggies over with a spatula and push the potatoes' un-browned sides to the bottom of the pan - cook everything for another 5 minutes or so until potatoes are tender
  6. Add salt and pepper to taste (and any additional seasonings you'd like)
  7. Grab the sausage you set aside and toss back into the pan with the veggies to reheat for about 2 minutes.
  8. Serve hot from skillet to plate and enjoy!

  1. I made this for supper this week, doubled the recipe as I wanted leftovers and I am glad I did. It was very good. I used regular potatoes as I was out of sweet potatoes….but will try it another time with sweet potatoes.

    1. Alex, I use True Story and Applegate brand which a both gluten free and organic.

  5. Although I am not on the Paleo diet, I don’t eat gluten or dairy so when I search for recipes paleo ones often come up. This sound delicious and something I will be keeping as a nice easy week night meal.

  7. Is this heated in the microwave or oven? Since I try to stay away from the microwave as much as I can, how much would you recommend to pre-heat if used in the oven?

  8. Made this last night and it was Delicious! I used regular sweet potatoes because that’s what we had on hand….I’m on a mission to use up stuff in the pantry. I cooked it in my cast iron skillet and the potatoes got a nice browning. Thanks for the recipe!

  9. Trina- I have never seen a white sweet potato. Can you use a regular one?

    1. Yes! And ask your grocer to stock them! They are a little less sweet and more like a regular potato. I love them! :)
