1/2lbground sausage– your choice (I used Italian sausage)
1/2large yam– peeled and cubed small
1/2large white sweet potato– peeled and cubed small
1red bell pepper– seeded and diced
Salt & pepper– to taste
1/4tspred pepper flakes(add for more heat, if desired)
Fresh parsley leaves– chopped (for garnish)
In a skillet over medium heat, add olive oil and onion. Cook about 4 minutes, then add sausage. Cook until sausage is browned, then add the garlic. Cook just 1 more minute, then remove mixture from pan and set aside.
Return empty skillet to stovetop, add more oil if needed, and then add the cubed yam and sweet potato. Sprinkle in the Italian seasoning, and continue cooking about 15 minutes. As potatoes soften, add the diced bell pepper. Cook just until potatoes are tender.
Add the meat mixture you set aside back into the skillet. Stir to heat everything through, add red pepper flakes if desired, garnish with fresh chopped parsley, and serve.
