2/3cupavocado oil or extra virgin olive oil
1raw eggpasteurized recommended for safety

Put the avocado oil, egg, mustard, and minced chipotle-adobo sauce in a tall container and mix with a hand immersion blender on high speed to emulsify. (You may also be able to do this with a stand mixer or blender – mix until sauce thickens). Refrigerate until ready to use
Burger Instructions
Fry or cook bacon slices, and set aside
Sauté 1 whole onion on medium-low heat in a saucepan with a couple of tablespoons of olive oil
In a bowl, mix together the raw ground beef (or turkey) with the chopped bacon, spices and minced chipotle-adobo
Gently form into patties for grilling
Preheat BBQ grill – set to medium- to medium-high heat
Cook patties about 5-6 minutes per side, or until they're cooked through how you like them
Top cooked burgers with the caramelized onions, some aioli sauce, and avocado slices
