Quick Bacon, Spinach & Kale Paleo Salad

There are only two kinds of salad: those you pretend to like because they’re “good for you,” and the ones filled with a wide variety of tastes, textures and colors you can’t wait to dive into.

Am I right? We’ve all had our fill of boring salads.

Well, no more I say! We can do better. Especially when it doesn’t take a whole lot of effort to fill a salad bowl with something more exciting than iceberg lettuce and Thousand Island dressing.

This bacon, spinach and kale paleo salad is a great example of how easy you can elevate greens to an art form.

Now I admit, I’m kind of a salad freak. I pretty much eat one every day. Co-workers often question my sanity. But I do it because eating fresh veggies makes me feel great. [av_sidebar widget_area=’Lockerdome’ av_uid=’av-j4slkp’]

And yes, I might be a salad snob too. I refuse to make (or buy) a salad that has about as much personality as grass clippings – even if it is good for me.

That’s why I try really hard to make the Paleo Newbie salad recipes I post here pretty interesting. Which I hope will inspire you to work more fresh, raw, nutrient-rich veggies into you and your family’s paleo diet.

I know that’ll never happen with tossed salads you just want to toss in the garbage, so let’s make a tasty one…

The protein in this one is bacon…off to a great paleo start right? Then you’ve got some simple greens (by the way don’t feel stuck with spinach and kale – pick any spring mix you like.) I’ve added carrots and apples in this one for a little extra sweetness to balance the kale and spiciness of the red onion, plus sprinkled in some crunchy nuttiness with a few sunflower seeds. And just about every salad I make has to have sliced avocado for the healthy fat and a rich creamy taste. Then for a dressing, one of my favorites is a quick honey-mustard (included in the recipe below) that you can make in about 60 seconds, or go with your favorite dressing.

That’s it…an easy paleo salad recipe loaded with healthy stuff that simply tastes amazing. Give it a try!

Bacon, Spinach & Kale Paleo Salad

Yield: About 2 servings

Bacon, Spinach & Kale Paleo Salad

Ingredients

  • 6 bacon slices, cooked and chopped
  • 6 cups baby greens (I used kale and spinach – choose your favorite mix)
  • 2 apples, cored and chopped
  • 1 cup shredded carrots
  • 1 avocado, pitted and diced
  • 1/4 cup red onion, diced small
  • 1/4 cup sunflower seeds
  • Honey Mustard Dressing
  • 5 tbs honey
  • 2 tbs dijon mustard
  • 1 tbs apple cider vinegar

Instructions

    Dressing
  1. Whisk ingredients together in a small bowl and set aside
  2. Salad
  3. Combine salad greens and veggies in a medium mixing bowl
  4. Toss in chopped bacon and sunflower seeds
  5. Serve with the honey-mustard dressing (or your favorite dressing) on the side
