“Peanut Butter” Chocolate Chip Cookies

I know, I’m kinda on a cookie kick right now. That’s because it’s the holidays and I’ve had a lot of requests for paleo-friendly treats.

And let’s face it, if you’re going to a holiday party, why not bring a treat you can share with others and enjoy yourself too?

Peanut butter has always been a favorite in our house – my boys love it with just about everything.

So I decided to whip up a “peanut butter” chocolate chip cookie – minus the peanut butter. It’s all paleo, gluten and dairy-free except for the chocolate chips. We used the Enjoy Life brand which are soy-free and dairy-free so I give them a pass.

The secret to this one is the sunflower seed butter. I think it tastes the most like peanut butter. You can find it almost anywhere, but feel free to use almond butter instead. I also used ghee in this recipe, but you can sub that out for pasture-raised butter if you prefer.

These “peanut butter” cookies are awesome! The first time I made them they were good, but for the next batch I added a little more sunflower butter which gave them an even more peanut-buttery taste.

I’m pretty sure your little peanuts will be happy to inhale these treasures hot out of the oven!

“Peanut Butter” Chocolate Chip Cookies Recipe

Ingredients

  • 1 1/3 cups almond flour
  • 1/4 tsp of baking soda
  • 3/4 tsp of sea salt
  • 1/2 tsp of ground cinnamon
  • 1/3 cup of raw honey
  • 3/4 cup of sunflower seed butter
  • 2 tbs of softened ghee
  • 2 tsp of pure vanilla
  • 1/3 cup of chocolate chips (we used Enjoy Life brand)
  • Servings
  • Makes about 1 1/2 dozen cookies

Instructions

  1. Preheat your oven to 350-degrees F
  2. In a medium-size bowl, first mix all the dry ingredients together
  3. In a smaller bowl, next mix all the wet ingredients together
  4. Pour the wet ingredients into the bowl with the dry ingredients, and combine
  5. Stir in the chocolate chips
  6. Roll cookie dough into 2" balls, and press down with a fork
  7. Note: If the dough feels too sticky, put in refrigerator for a half hour
  8. Bake on cookie sheet with parchment paper about 9 - 11 minutes, or until the edges are golden brown. (Oven cooking times may vary)
  9. Allow to cool and enjoy!

    1. I haven’t made this recipe with coconut flour, so I’m not sure. Sorry.

    1. Joyce, maybe a walnut flour would work. I have had several people tell me this is a good option. It can be found at whole foods and “healthy” grocers. I hope this helps.
