Hola and Happy Cinco de Mayo everyone! Wishing you could have a Mexican dish to go with your margarita? Well, just because you’re paleo doesn’t mean you can’t enjoy a spicy south-of-the-border inspired fajita wrapped up in a yummy tortilla…and still stick to the paleo playbook…
All you need to do is marinade a little flank steak, whip up my easy recipe for gluten-free tortillas, chop some veggies and it’s time to celebrate today or any day of the year with hearty and healthy steak fajitas!
This is one of our favorite paleo meals. We’re big pepper and onion fans here, so sizzling fajitas and sautéed veggies are always at the top of our paleo menu. You should really give these a try and serve them to your family – who doesn’t love a great fajita? With a little salsa and guacamole on the side, you’ll be the hostess with the mostest. :)
We made these with flank steak but feel free to choose your favorite cut of beef. Cook your steak (or pre-cut steak fajita strips) on a grill or you can fry them up indoors on a hot skillet if you like. The aroma that floats through your kitchen will bring everyone to the table pronto. And all you’ll see are smiling faces looking at you waiting for that first spicy bite smothered in guacamole.
This is a great meal to share with family and friends. If your entertaining, make up the tortillas ahead of time or even the day before, and marinade your steak – give it at least an hour to soak up all those great flavors. When your guests arrive, you can enjoy a cold beverage with them and dinner will be ready in a snap!

Ingredients
- 1 lb uncooked flank steak (whole steak or pre-cut fajita strips)
- 1 medium yellow onion
- 1 red bell pepper
- 1 green bell pepper
- 2 limes, juiced
- 1/4 cup olive oil or coconut oil
- 2 tsp chili powder
- 1 tsp cumin
- 1 tsp salt
- 1 tsp pepper
- 1 tsp paprika
- 1 tsp oregano
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 tsp to 1 tsp red pepper flakes (adjust to taste)

- Makes about 6 fajitas
Instructions
- In a small mixing bowl, whisk together all marinade ingredients
- Season uncooked flank steak (or strips if pre-cut) with salt and pepper
- Place seasoned flank steak in a Ziplock-type bag and pour over marinade. Seal and refrigerate for 1-3 hours to tenderize and flavor the steak.
- Make your tortillas while the steak is marinating. See this link: Paleo & Gluten Free Tortilla Recipe
- Slice onion and peppers into strips lengthwise, and set aside
- When steak is marinaded, grill over medium heat until desired doneness is reached. Tent whole steak (or strips) with aluminum foil and set aside
- Add a tablespoon or two of oil to a large frying pan set to medium heat
- Season peppers and onions with salt and pepper
- Sauté veggies together about 3-5 minutes – just until slightly tender
- If you cooked a whole flank steak, slice into fajita-sized strips
- Serve with warmed tortillas
- Garnish however you like – guacamole, salsa, or just a squeeze of lime
Excellent marinade, used on chicken and beef fajitas for a dinner party. Nice lime flavor, everyone enjoyed it. Putting this one in my file.
