Paleo Pork Chops with Cherry Barbecue Sauce

That’s it. The toughest part is having the patience to let it simmer on the stove for 25 minutes while all those flavors bubble up and fill your kitchen with their heavenly aromas. But wow, is this sauce worth it!

Here’s what you get in this one… First off, a rock-solid tomato-based sauce. Some store-bought barbecue sauces taste more like doctored-up ketchup. With this one, the rich tomato taste comes through loud and clear.

And layered on top of that, the earthy fruitiness of a full cup of dark sweet cherries – subtle and oh so good. Then you’ve got this nice undercurrent of dark, thick blackstrap molasses going on, balanced nicely with some light pure maple syrup. So where did I get the idea to add cherries to a paleo barbecue sauce? Glad you asked! When I was growing up in the Northwest, we had a huge family gathering in our backyard every 4th of July. And…we had a big cherry tree back there too. So while the watermelon was chilling in the creek that ran beside our house, it was my patriotic duty to scamper up that cherry tree and pluck as many cherries as my little fingers could grab. Sometimes those cherries would wind up on top of the hand-cranked ice cream Dad would churn out, or just become part of the fresh fruit smorgasbord on our picnic table.

So this cherry-infused barbecue sauce is part tribute to simpler times and the innocence of youth. And the other part is I just wanted a really good barbecue sauce!

The next thing I’m going to make with this one is barbecued chicken breasts. After that, maybe I’ll work it into my next beef or turkey burger.

Paleo Cherry Barbecue Sauce

Paleo Cherry Barbecue Sauce

Ingredients

    Cherry Barbecue Sauce
  • 1 tbs grass-fed butter or ghee
  • 1/2 cup diced yellow onion
  • 2 cloves of minced garlic
  • 1 can (6 oz) tomato paste
  • 1 1/4 cup beef broth
  • 1 cup frozen dark sweet cherries, thawed, pitted and chopped
  • 1/3 cup pure maple syrup
  • 3 tbs juice from an orange
  • 2 tbs apple cider vinegar
  • 1 tbs blackstrap molasses
  • 1 1/2 tsp salt
  • 1 1/2 tsp pepper
  • 1 tsp chili powder
  • 1/2 tsp dry mustard
  • 1/4 tsp chipotle powder
  • Yield
  • About 2 cups of Cherry Barbecue Sauce

Instructions

  1. In a medium saucepan first melt butter or ghree, then add diced onion. Sauté 4-5 minutes or until tender. Add garlic and sauté 1 more minute
  2. Add all the above remaining ingredients to the saucepan
  3. Bring to boil over medium heat, then reduce heat and allow to simmer for at least 25 minutes stirring occasionally
  4. Remove from heat and pour into blender. Blend until smooth
  5. Pour into a container to brush on beef, pork or poultry. Set aside a portion to serve as extra sauce
  6. Refrigerate unused sauce – should keep for about one month
  7. CHERRY BARBECUE PORK CHOPS MINI-RECIPE
  8. Salt and pepper pork chops. Baste with Cherry BBQ Sauce. Grill over medium-high to high heat, turning and basting 3-4 times until cooked through (about 5-7 minutes total grilling time, depending on the thickness of your pork chops). Remove from grill and let rest a few minutes before serving with a side of extra Cherry BBQ Sauce!
