Paleo Pizza Sweet Potato Skins Recipe

Are you ready for some football??!!  I’m pretty excited this year. My hometown team is looking great, and they deserve a nod…

They have never won a Super Bowl but I think this may be their year. Watch out everyone for the Seattle Seahawks. I’m in Arizona but proudly wear my #12 jersey.

So how about kicking off the start of the NFL season with some awesome paleo football food?

All the other NFL fans have their favorite game-day eats, why can’t us paleo and gluten-free people have something yummy to enjoy too?

A hot-out-of-the-oven sweet potato stuffed with pizza sauce and all the fixings might sound crazy to you. It kind of did to me too. But I went for it anyway, and guess what? Woohoo…touchdown potato skins! I just had to spike my oven mitt in celebration!

Oh you’re gonna love these. And keep in mind, you could stuff these little skins with whatever you want. We chose uncured pepperoni, with onions, bell peppers and black olives to go along with the pizza sauce that’s inside. [av_sidebar widget_area=’Lockerdome’ av_uid=’av-7okma’]

The combo was a winner! I’ll definitely be making these again through the holiday season for my friends.

I’m pretty sure your non-paleo peeps will love them too! Helpful hint: serve with a cold brewski!

Paleo Pizza Sweet Potato Skins

Paleo Pizza Sweet Potato Skins

Ingredients

    Pizza Sauce (Or you can just use your favorite marinara sauce)
  • 1 15 oz can tomato sauce
  • 1 6 oz can tomato paste
  • 1 1/2 tsp garlic
  • 1 tsp minced onion
  • 1 tsp ground onion
  • 1 tbs ground oregano
  • 1 tbs ground basil
  • Sprinkle of red pepper flakes, as desired
  • Salt & pepper to taste
  • Sweet Potatoes & Stuffing
  • 4 medium sweet potatoes
  • 1 1/2 cups of mixed chopped bell peppers
  • 1/2 cup diced onion
  • Pepperoni (We used Applegate brand)
  • Small can of chopped olives

Instructions

  1. Preheat oven to 375-degrees F
  2. Place whole sweet potatoes on a foil lined cookie sheet. Poke some holes in them with a fork.
  3. Bake for about 40 mins or longer until tender. You will notice they release some of their juices.
  4. If you're making the pizza sauce, now would be a good time. Mix all of the pizza ingredients together in a sauce pan and simmer for about 10 mins until combined: Tomato sauce, paste, garlic, onion, onion flakes, oregano, basil, salt, pepper and red pepper flakes. Super easy. Done!
  5. Once you remove potatoes from the oven, you can now saute your peppers and onions over medium heat until onions are translucent.
  6. When the potatoes are cooled, slice them in 1/2 lengthwise and remove about 2/3 of the potato from the skins
  7. Take a spoonful of your pizza sauce and spoon into the bottom of the potato
  8. Add onion and pepper mixture
  9. Then add pepperoni and olives
  10. Put stuffed potatoes back in 375-degree oven and bake for about 10 mins (oven times may vary)
  11. Remove from oven and enjoy while watching the game!

  1. I made these Potato Skins tonight for my Husband and myself and they were delicious! Since we are following a Plant Based Diet instead of Pepperoni I used sliced Mushrooms on top and instead of crushed Basil I used chopped fresh Basil in the Sauce. So tasty and filling. Thank you.
