Paleo Pepper Rings with Bacon & Hash Browns

Like hash browns and bacon? How about sautéed peppers? We’ll here’s a unique way to combine all those awesome flavors into one easy and delicious paleo side that will stack up beautifully next to your morning eggs. 

This was a fun little idea I came up with last weekend – in a very foodie avant-garde moment I guess.

Saturday breakfast for us is usually taking whatever veggies are left over from the week and making some sort of hash to serve with eggs. Chop them up, throw them in the pan, cook until tender – nothing fancy.

So this time when I was slicing through the last of our bell peppers, I just happened to think how cool it would be to cook them with sweet potatoes inside. So I fried up a little bacon, shredded a white-fleshed sweet potato, diced some onions, packed everything into the colorful pepper rings and gave this whacky idea a shot. [av_sidebar widget_area=’Lockerdome’ av_uid=’av-2n9kf3′]

Well this one was a winner the first time! Very easy, looked beautiful, and tasted amazing.

These are a little out of the ordinary which I love – plus they’re chock full of flavor and just really simple to make. A beautiful addition to eggs, or really you could easily whip these up to serve with just about any meal.

Of course you can add whatever veggies or spices you like to the mix. I kept my spices simple with just salt, pepper and a little chipotle seasoning.

They cook through very well on medium to medium-low heat and you should get a little bit of crispiness on each side.

The key is not to cook them in a pan that’s too hot. You want to give the raw grated potato a chance to cook all the way through without burning up the tops and bottoms of these in the process…so a little bit lower and slower is the way to go.

And when you’re slicing the pepper rings, try to keep them about 1/4-inch to 1/3-inch in thickness and all about the same size so each batch will be ready about the same time.

These cuties are sweet, savory, and definitely smokey with the added bacon. Totally paleo and totally awesome.

Yield: Makes about 8 pepper ring hash browns

Paleo Pepper Rings with Bacon & Hash Browns Recipe

Ingredients

  • 6 slices of bacon, cooked and chopped (reserve the bacon drippings)
  • 2 large bell peppers – any color
  • 1 large white raw sweet potato – shredded
  • 1/2 cup diced yellow onion
  • 1 egg – whisked
  • Salt, pepper + your choice of any other seasonings

Instructions

  1. In a large skillet, fry bacon, cool and chop – reserve the bacon drippings!
  2. Cut peppers into about 1/4" to 1/3" rings and remove any seeds
  3. Shred raw sweet potato and place in medium bowl
  4. Add your chopped bacon to the bowl
  5. Whisk the egg and add to the bowl
  6. Sprinkle with salt, pepper, and/or other seasonings to taste
  7. Now mix everything together
  8. Heat about 2 tbs of bacon fat in skillet over medium to medium low heat - not too hot, you want to give the potatoes enough time to cook through
  9. Place 3-4 pepper rings in the heated skillet, and place about 1/4 cup of potato mixture in the center of each ring. Press firmly down and fill to each ring's edge
  10. Cook about 4-5 minutes per side, turning carefully with a spatula. Potato should be crispy on the sides and cooked through - they're done when the shredded potato is tender throughout
  11. Serve hot out of the pan and enjoy!
