Paleo Olé Egg Breakfast

This creation came about when I opened the fridge this morning and was craving chorizo. I love that stuff…spicy and full of flavor…

whole30 compliant recipe markSo today I just thought I would post a picture of these yummy, south-of-the-border inspired eggs! It’s a true hearty paleo breakfast.

I browned the chorizo and even sautéed the peppers and mushrooms before I scrambled the eggs. I know it’s not necessary, but I like them better that way. I used red, orange, and yellow chopped bell peppers, but you can add whatever veggies you have on hand.

Whisk up some eggs. I used four, then pour them into the pan and add the veggies and chorizo. Set a little creamy avocado on the side and ring the breakfast bell!

Here’s a little hint: I browned more chorizo than I needed and stored it in a Ziplock bag for breakfast tomorrow. As a newbie, you should always plan ahead, and try to make extras when you can. You’ll find it makes eating Paleo much easier and saves a lot of time too!
