If you’re not paleo, a gluten-free maple and bacon donut might seem a bit bizarre. Just think of it this way: pancakes, maple syrup, and bacon. All breakfast flavors you love, right? Well, here they are together in one glorious glazed donut!
But here’s the deal. We’re not allowed to have a lot of sweets on the paleo plan. That’s just how it goes. But if you’re like me and my hubby, we’ve stuck pretty close to the paleo rulebook for awhile – going on 8 months now. We believe we’re entitled to a little treat every now and then. How about you?
Or maybe you’re not paleo at all, and just want to enjoy treats that are gluten-free and contain no processed sugars. Well, you’ve hit the jackpot with this recipe!
Obviously, this is not a nutritious breakfast recipe. This is definitely a dessert that’s gluten-free and paleo-friendly.
So here’s a little backstory on the donuts… I lived in the Northwest for a long time. If you’re a northwesterner too, you’ve probably heard of VooDoo Doughnuts in Portland, Oregon. They serve crazy, awesome, full-on, wheat and refined sugar donuts.
In fact, they’re so good, the minute they open the doors to their hole-in-the-wall on 3rd Avenue, a line forms around the block.
One of their bestsellers is a maple bar with bacon. Seriously? What could be better than that?
So that’s where I got my inspiration. I wanted to make a paleo version of VooDoo’s popular treat. I admit I stepped outside the box with this one, but I can honestly say, I love it!
What’s special about these donuts? There are actually little bits of bacon inside the donut. You take a bite, taste the sweet cake along with a little salty-smokey flavor from the bacon.
Oh my goodness…I think you’ll go hog-wild over the flavor of these.
And if that wasn’t enough, I used a little more bacon as sprinkles on top of the sweet maple glaze! Boom!
There you have it! The perfect paleo-friendly, maple bacon donut…completely gluten-free and refined sugar-free!

Paleo-Friendly and Gluten-Free Glazed Maple & Bacon Donuts
- donut baking pan
- 4 eggs – whisked
- 1 3/4 cups almond flour
- 2 tbs coconut flour
- 1 tsp baking soda
- 1/2 cup raw maple syrup
- 1/4 cup coconut oil – melted
- 1 tsp vanilla
- 1 tsp cinnamon
- 1/8 tsp salt
- 1/3 cup bacon bits about 6-8 pieces, fried and crumbled
- 1/4 cup raw maple syrup
- 1/4 cup coconut butter
- 1/4 cup coconut milk
- 1 tsp vanilla
- 1 tsp cinnamon
- 3 tbsp raw honey
- 2 tbsp plus 1 tsp of palm shortening
- About 6 pieces of bacon crumbled for bacon “sprinkles” on top of donuts
Donut Instructions (see separate glaze instructions below)
- Preheat oven to 350º F
- Grease donut pan
- In a medium bowl mix dry ingredients. almond flour, coconut flour, baking soda, cinnamon, and salt
- In another bowl, mix all the wet ingredients: eggs, maple syrup, coconut oil and vanilla
- Pour the wet ingredients into the bowl with the dry ingredients, and stir thoroughly to combine
- Gently stir in bacon bits
- Get a large Ziplock bag and pour the batter into it. Release the air and seal the bag.
- Cut off a corner and pipe the donut batter into the donut pan. Fill each mold about 2/3 full
- Tap the pan on the counter to make sure the top is even
- Bake for about 20 min or until a toothpick comes out clean (oven cooking times vary)
- Allow to cool, then remove donuts and place on wire rack until you’re ready to glaze
- In a bullet or a good blender combine all the glaze ingredients
- It should be the consistency of a thick glaze – like you’d normally find on a donut
- Make sure the donuts have completely cooled before glazing
- Dip one side of the donuts in the glaze and return to the wire rack.
- Sprinkle with bacon crumbles
- Makes somewhere between 6-8 glazed maple-bacon donuts
