Are you ready for another easy, all-in-one paleo meal idea? I call this one “chop and drop” because that’s literally what you do…

You just chop and season the veggies and sausage, mix them all together and drop them in the oven! It’s that simple.

This hearty and nutritious meal is so easy, you can whip it up even after a long day at work. In fact, it gives you some extra time to relax or play with the kids while your savory din din roasts in the oven.

A bowl full of sliced veggies and seasonings ready to go…just add the sausage and roast in the oven!

It’ll take you about 10 minutes or so to get everything chopped and seasoned, and then around 40 minutes to cook.

Once the veggies and sausage are chopped, you just sprinkle them with olive oil and season them in a mixing bowl. Then you spread out all the pieces on a large foil-lined or lightly-greased cookie sheet, and slide your savory smorgasbord into the oven. Remember to flip the veggies and sausage over a couple of times while they’re cooking – you want to make sure everything gets roasted evenly.

As you can see, there’s absolutely nothing complicated about this paleo recipe. You can go with the veggies I’ve suggested (it’s a delicious combo I think!), or change things up and choose your favorites. [av_sidebar widget_area=’Lockerdome’ av_uid=’av-2qtnll’]

This recipe easily serves 4-6 depending on the appetites you’ve got sitting around your dinner table.

And if you’re lucky enough to have leftovers, the veggies and sausage are great reheated for lunch the next day. I know that from experience!

Paleo Chop & Drop Roasted Veggies & Sausage Recipe

Ingredients

  • 1 package (or about 1 lb) of your favorite pre-cooked sausage links – cut into 1-inch long sections (We used Applegate brand)
  • 2 potatoes (1 yam and 1 white flesh sweet potato) cut into 2-inch chunks
  • 2 medium-size carrots, chopped into small rounds
  • 1 red pepper, cut into large slices
  • 1/2 red onion, peeled and cut into large slices
  • 3 cloves of minced or pressed garlic
  • 2 tbs of olive oil
  • 1 1/2 tbs of Italian seasoning
  • A healthy pinch of red pepper flakes
  • Salt & pepper to taste
  • Plus any additional seasonings you desire
  • Serves 4-6

Instructions

  1. Preheat oven to 375-degrees F
  2. In a large mixing bowl, add all sliced veggies, garlic and cut sausage links
  3. Next add olive oil and toss everything to coat
  4. Sprinkle in all seasonings and mix again to distribute
  5. Now grease or line with aluminum foil a large-rimmed baking sheet
  6. Spread out the veggies and sausage across the baking sheet
  7. Place uncovered in oven
  8. Bake a total of 35 to 45 minutes, turning veggies and sausage twice during cooking. (Oven temperatures and times will vary)
  9. Test doneness by checking the sweet potatoes – if they're soft, it's done
  10. Serve hot and enjoy!
