Here’s a quick and easy non-dairy frozen treat to make over the weekend. Your kids or significant other will love you just a little bit more if you churn out this creamy delight…

Anyone who reads my posts has to know by now I’m kind of an ice cream freak. It’s not that I eat it all the time. And the only kind I indulge in now is the all-natural, dairy-free, and refined sugar-free kind.

But whenever I’m craving a special treat, chances are you’ll find me rooting through the freezer searching for the last remaining scoops of one of my frozen concoctions.

Luckily, I make my homemade paleo ice cream in pretty small batches – a pint or so at a time. That way it doesn’t hang around long enough to get me into too much trouble.

I have made pumpkin pie, strawberry-banana, cherry-chocolate-chip, and banana-nut paleo-style ice creams.

Today though, I was craving a little chocolate.

And for me, putting chocolate and almond nut butter together is a no-brainer.

Remember those commercials from years ago? “Hey, you got your chocolate in my peanut butter! No, you got your peanut butter in my chocolate!” That’s right, Reese’s peanut butter cups!

This chocolate and nut butter ice cream recipe reminds me of those. This one is that good!

I just made it up on the fly and really like it! It only takes a few ingredients and is so easy to whip up, you really have no excuse not to give it a try!

So plug in that ice cream maker and watch your family line up for this one. Do it now, while it’s still summer! :)

Paleo Chocolate & “Peanut Butter” Ice Cream Recipe

Rich chocolate and a "peanut butter" flavor come together in this simple paleo, gluten-free, and non-dairy "ice cream" recipe made with coconut milk.

Ingredients

  • 1 can full-fat coconut milk
  • 1/4 cup raw honey
  • 1/4 cup almond butter
  • 2 tbsp unsweetened cocoa powder
  • 1 tsp vanilla
  • 1 tsp cinnamon

Instructions

  • Add all above ingredients in a blender to combine. Mix in blender for about 1 minute
  • Pour into electric ice cream maker
  • Takes about 20-25 minutes to churn before it’s ready to eat (or freeze for later)
  • Makes about 1 pint
  • Yum. Paleo ice cream time!
  • Recipe can be easily doubled.
  • Note: If you freeze coconut ice cream it will be rock hard because there are no preservatives to keep it soft. You can let it sit out for about 20 minutes before serving, or microwave for about 20-30 seconds to soften
