You’re busy…working hard…getting kind of hungry…and a handful of nuts, a dry slab of beef jerky, or raw veggie sticks just doesn’t sound all that appealing…
Well how does this grab you: No-Cook 10-minute Cashew Nuggets!
This is a simple, gluten-free recipe with a sweet reward – in minutes you can whip together a much healthier version of something that tastes a whole lot like a PayDay candy bar.
And bonus, there’s only a tablespoon of raw honey in the whole batch. Just don’t over indulge – there’s a good bit of sunflower seed butter in these. [av_sidebar widget_area=’Lockerdome’ av_uid=’av-22ixq0′]
I love (or I should say used to love) PayDay candy bars. I really like the taste of salty and sweet together.
That’s what inspired me to come up with this easy recipe. And to me, it’s the peanut-like flavor these have that really put them over the top.
Take a little break and make these golden nuggets of goodness…guaranteed to put a smile on your face! :)

Ingredients
- 1/4 cup of sunflower seed butter (we used Trader Joe's brand)
- 2 tbs of coconut oil, softened
- 2 tbs of coconut butter
- 1 tbs of honey
- 1/2 tsp of pure vanilla
- 1/8 tsp of salt (taste mixture without salt first to be sure it needs it)
- 1 cup of cashew pieces
Instructions
- In a mixing bowl, combine ingredients above ( except the cashews )
- Once thoroughly mixed, stir in the cashews
- Line a shallow pan or baking dish with parchment paper (we used a 7" x 5" Pyrex dish)
- Spoon in mixture to form an even layer
- Place in freezer until mixture solidifies
- Serve and enjoy
- Keep refrigerated (these will melt at room temperature)
