Easy Paleo Peppermint Mocha

It’s that time of year again…there’s a crispness in the air…the leaves are changing….and the mornings require slippers and a little something extra to warm you up. 

You might be chuckling right now if you know I live in Phoenix. But the truth is when the sun sets early and it’s dark when I leave for work, it’s fall in the desert. And that warrants a a non-dairy creamy peppermint mocha.

You might drink mochas and lattes all year long, but for me they’re the occasional fall treat. I love them when I can just relax and enjoy the rich coffee flavor while surfing the net and checking out recipes. It’s my perfect lazy weekend morning!

I think café mochas are best with a hint of peppermint. Perfect combo. Last weekend my hubby had the chance to try one of these sweet concoctions and we both decided we will definitely make these again.

I had my hubby taste the first cup. Later I asked him what he thought – he held up his empty cup with a smile. Ok, gotcha. Guess I need to make more.

So we had another round, and he even managed to take a picture before he was on a caffeine high!

You don’t need to be a professional barista to whip up this delicious non-dairy café mocha with a hint of mint…just a few common paleo kitchen ingredients and either a blender (for the foam) or a spoon is all it takes.

I’m pretty sure this simple mocha will be our weekend morning drink of choice through the holidays.

Creamy, chocolatey, with a silky finish that let’s you know there is no sacrificing flavors for this sweet cup of joe. It’s pretty much perfect.

This is the simplest paleo mocha recipe ever too. Make a shot of expresso or strong coffee, heat up your coconut or almond milk, and add them to a bullet or blender along with the other ingredients. Mix for a few seconds and pour!

Coffee lovers, make it. Take the first sip, close your eyes, and savor the fall morning. Ah, nothing like it!

Easy Peppermint Mocha Recipe

Yield: 1 Paleo Peppermint Mocha

Easy Peppermint Mocha Recipe

Ingredients

  • 1 shot of your favorite expresso (or strong coffee)
  • 2/3 cup coconut milk or almond milk, heated
  • 1 1/2 tbs cacao powder
  • 1 tbs raw honey
  • 1/4 tsp peppermint extract
  • Optional: Spinkle with dark chocolate shavings or crushed cacao nibs

Instructions

  1. Make the shot of expresso or strong coffee
  2. Warm the coconut milk or almond milk
  3. Add coffee and milk to a small blender or NutriBullet, along with the cacao powder, honey and peppermint
  4. Blend for about 15-30 seconds until mixed and foamy (you can also just stir everything together for the froth-free version)
  5. Top with chocolate shavings or crushed cacao nib sprinkles if desired
  6. Enjoy!

  4. Is the only reason you put it in the blender to get the foam? Just askin’ cause I don’t have a bullet, and pulling out my big ole blender sounds like too much work for me. So do you think a lazy stir would work just as well? :)

    1. Hi Gwen…yes, just give it a good stir! Same great cup of mocha, minus the foam :)
