Easy Bacon-Wrapped Chicken Skewers

You gotta love a paleo recipe that’s both simple and delish…well whipping up a plateful of yumminess doesn’t get much easier than this one.

These kabobs start with a pound or so of boneless, skinless chicken breasts. Just get those chopped down to bite-size pieces.

Next, the no-brainer marinade…two ingredients are all you need: honey and balsamic vinegar. Just let your chicken soak up this simple goodness for about an hour in your fridge, and you’re ready for the next step.

Wrap about a half slice of uncooked bacon around each piece of marinated chicken, and slide it onto your metal or water-soaked wooden skewer so the bacon is held in place. Brush a little extra marinade over the kabobs if you like, place them on a baking sheet, and pop them in the oven.[av_sidebar widget_area=’Lockerdome’ av_uid=’av-v7yejs’]

You can easily turn this into a grilled paleo recipe if you like. Just drop your loaded skewers onto a well-oiled grate over medium high heat, and turn the kabobs over after 3-4 minutes. Be sure and set aside a little bit of your marinade before soaking your chicken if you plan on brushing it over your kabobs as they cook on the grill. Remove your skewers when the chicken is cooked through.

These chicken-bacon skewers are amazing just by themselves, or dipped into something simple like mustard. Or here’s another idea for you…I like to chop these up a little and toss them into a crispy salad. Splash the greens with your favorite vinaigrette and enjoy!

Easy Bacon-Wrapped Chicken Skewers Recipe

Ingredients

  • 1 lb boneless, skinless chicken breast, cut into chunks (bite size)
  • 4 TBSP raw honey
  • 4 TBSP balsamic vinegar
  • 5-6 uncooked bacon strips, cut in half
  • Skewers (soak in water if wooden)

Instructions

  1. Chop chicken. Mix honey and balsamic together. Place chicken in plastic bag or container, pour in honey-balsamic mixture, and allow chicken to marinate 1 hour in fridge.
  2. Remove chicken chunks from marinade. Wrap each chunk with a 1/2 bacon strip, and thread onto skewers. Brush with marinade and bake in 400º F oven 25-30 minutes, or until chicken is cooked through.
  3. Serve hot and enjoy!
