This pulled pork recipe was inspired by Qdoba Mexican Grill. Have you been there? It’s a chain sort of like Chipotle. Pretty good food, but not entirely paleo…
The story is, my hubby and I went to Colorado to see my son who is attending college there. Can I just take a second to tell you how beautiful Colorado is? Wow. I’ve been skiing in Vail but had never hung around Boulder before. We were just blown away with the scenery. It’s a truly beautiful place! We might have to move there someday.
Anywho, we weren’t familiar with the area and we were starved, so we started searching for someplace to grab a quick meal.
We didn’t know much about Qdoba, but walked in and crossed our fingers, hoping we could order something close to a paleo meal. We chose the Naked Burrito – that’s all the burrito fixings without the tortilla wrap.
And oops, we had it with brown rice (yes we knew that’s a paleo no-no, but we were desperate.) We topped the rice with pork, grilled veggies, pico and guacamole. [av_sidebar widget_area=’Lockerdome’ av_uid=’av-2rx1bs’]
Well we loved it! The flavor was so good, and not counting the rice, we did pretty well.
So when I got back home, I decided to create my own version of the Naked Burrito that would be completely paleo – no grains, gluten or dairy.
I used a slow cooker for the pork, so the prep was really easy. To save time, I grabbed a can of green chilies because I wanted something you could throw together in the morning before work and let it cook all day. Feel free to use fresh chilies if you want.
After your pork has cooked, you can quickly make your cauliflower rice, add some grilled veggies…and boom! You’ll sit down to a wonderfully awesome meal full of flavor.
I’m kind of on a Mexican food kick right now and this pulled pork paleo dish was spot on! I wish they had a smell blog so you could get a whiff of what my house smells like right now – you’d be banging at my door!
If you have any leftover pork, lucky you! Mix it with just about anything for another great dish the next day, or do what I did and freeze it for a super-easy meal when you suddenly have a craving for healthy Mexican food.
