Win Kelly Bejelly’s new cookbook: PALEO EATS!

My Portland paleo pal Kelly Bejelly has just come out with a fabulous new paleo cookbook…and I’m going to show you how you could win a soft-bound copy!

Most of you don’t need an introduction to Kelly. She’s of course the creator of the popular paleo blog A Girl Worth Saving. If you’ve followed her for any length of time you know this girl puts her heart and soul into figuring out easy paleo dishes every member of the family will love.

Kelly’s new cookbook is called: Paleo Eats: 111 Comforting Gluten-Free, Grain-Free and Dairy-Free Recipes for the Foodie in You. Yes, that’s a mouthful…but the good news is the list of ingredients for most of her recipes is shorter than the book’s title!

I’ve spent a few weeks thumbing through Paleo Eats and I’ve put a ton of her simple paleo recipes on my must-try list.

Most paleo peeps I know get tired of eating the same old tried and true paleo meals. Well Kelly has done something about that! You get 111 original recipes in this gorgeous, 300+ page glossy cookbook that will yank your taste buds right out of their rut and put something deliciously different on your plate!

What I really like about Paleo Eats is Kelly gives you the tasty paleo versions of the dishes you probably loved growing up. Check these out…she has recipes for Southern Fried Chicken, Battered Onion Rings, Key Lime Pie, Fried Ice Cream, and many, many more faves packed into Paleo Eats. She’s worked her kitchen magic to not only make your favorites healthy and paleo, but just as importantly – delicious! These are the kind of yummy meals that will have everyone in your family begging for a second helping.

One recipe in particular that caught my eye was the Coconut Cinnamon Cereal…add a little fruit, splash in some almond milk…mmm give me a spoon quick! I do miss cereal and can’t wait to try this one. Kelly was sweet enough to let me reprint this recipe from Paleo Eats here so I hope you give it a try along with me!

Coconut Cinnamon Cereal – from Paleo Eats by Kelly Bejelly

Yield: 6 Servings

Coconut Cinnamon Cereal – from Paleo Eats by Kelly Bejelly

Ingredients

  • 1 cup unsweetened shredded coconut
  • ½ cup raw sunflower seeds
  • 1 tablespoon ground cinnamon
  • ¼ teaspoon sea salt
  • ¼ cup maple syrup
  • 1 large egg
  • ½ teaspoon melted coconut oil

Instructions

  1. Preheat the oven to 350 degrees. Line a baking sheet with parchment paper.
  2. Place the coconut shreds and sunflower seeds in a food processor and grind for 30 seconds.
  3. Add the cinnamon, salt, maple syrup, egg, and coconut oil and pulse until combined, about 2 minutes.
  4. Scoop the mixture onto the prepared baking sheet. Cover with a second piece of parchment paper and with a rolling pin, roll to ¼-inch thick. Remove and discard the top piece of parchment paper.
  5. With a wet knife, score the dough into 1-inch squares.
  6. Place in the oven and bake for 10 to 15 minutes, until firm to the touch. Remove from the oven and let sit on the pan for 15 minutes to allow it to crisp up.
  7. Store in an airtight jar in the refrigerator for up to 1 week.
