Who’s The Chunky Monkey?

As you can probably tell, I’ve always loved Ben & Jerry’s ice cream. I started with Cherry Garcia and have moved on to my second favorite, Chunky Monkey…

I should have bought the company’s stock way back when. Truly genius.

But since I’ve got to steer clear of the frozen desserts aisle now, I’ve tried my best to duplicate some of their flavors – Paleo style.

As you can see from my recipes, ice cream is big in our house. Maybe because it’s May and already pushing 100 degrees here in Arizona? Yep. A/C is blasting away, the hubby spent all day doing yard work, so I say that warrants a nice cool treat. [av_sidebar widget_area=’Lockerdome’ av_uid=’av-37gf26′]

Yes, I know even this Paleo ice cream shouldn’t be an every day indulgence. But today it is, and since I’m trying out a new recipe, hubby gets to be the first in line!

We all know Paleo eating means spending some time in the kitchen. My new mission is to bring you Paleo recipes that are fast, easy, and family-friendly. I hope you like this one.

Paleo Chunky Monkey "Ice Cream" Recipe

Yield: Makes about 1.5 pints

Paleo Chunky Monkey

Ingredients

  • 1 can (13.5 oz) of full fat coconut milk
  • 2 bananas
  • 1/2 cup dark mini chocolate chips (we used Enjoy Life brand)
  • 1/3 cup chopped walnuts or pecans
  • 1/2 tsp almond extract
  • 2 tbs to 1/4 cup of raw honey, depending on how sweet your bananas are, and how sweet you like it

Instructions

  1. Mix coconut milk, bananas, honey and almond extract in a blender for just a minute until blended
  2. Pour mixture into an ice cream maker
  3. When ice cream starts to thicken, sprinkle in nuts and chocolate chips
  4. Note: if you start with cold coconut milk the ice cream will harden faster. I always keep a cold can handy in my fridge to whip up a quick treat!
  5. Once it's done, eat it up little monkey!

  3. Can you substitute the banana for anything else? (Really really don’t like bananas)

    1. Banana is just part of the deal with Chunky Monkey ice cream…but I have a number of other paleo, non-dairy ice cream recipes that don’t use bananas…take a look at the blackberry, cherry, pumpkin or salted caramel ice creams – those are all banana-free recipes.

  4. Can you recommend an ice cream maker?

    1. Sure can, we’ve used the Cuisinart Pure Indulgence 2-Quart Ice Cream maker for a couple of years now and it’s worked really well without any problems! (The product link is to our affiliate account on Amazon.com if you want to go check that one out!)

  5. My ice cream maker is a 5 quart. Do you see any problem with me doubling the amount of ingredients to yield more?

    1. You can make the recipe as is in a bowl and place the ingredients in the freezer stirring every 15 min or so to your desired consistency. :)

    1. All of the coconut milk and cream :)

    1. It makes about 1 1/2 pints. Serving size depends on the appetite. ;)

  10. could i just put this mixture in the freezer after i make it? i don’t have an ice cream maker…

    1. Yes you can…just stir it every 15 minutes until it reaches an ice cream consistency you like.
