A tasty paleo lunch doesn’t get much easier…dig into the creamy-goodness of this spiced-up buffalo chicken dish you can whip together in minutes!

So who doesn’t love buffalo wings, right?

They’re a little spicy…have lots of juicy flavor…these wings are ordered by the heaping platefuls at restaurants. Served with ranch or blue cheese dressing of course, and celery stalks or carrot sticks on the side. So good, but so not paleo.

Well here’s how to get a lot of those same fantastic flavors, plus the sauce, plus the veggies – all in one easy dish that’s 100% paleo.

And maybe the best part, this one will take you about 10 minutes to prepare – if you’ve got a couple of things ready ahead of time. Seriously, it’s that simple. [av_sidebar widget_area=’Lockerdome’ av_uid=’av-unev7d’]

First, you’re going to need shredded chicken. Most grocery stores carry hot, pre-cooked, whole rotisserie chicken. Grab one of those. Next you’ve got to have paleo mayonnaise…that’s essential to this recipe. You can either whip up a fresh batch pretty quick (here’s my easy Paleo Mayo recipe) or just go with your favorite pre-made brand – check it first to make sure there’s no unhealthy junk in it.

With those two essentials, the rest is a cinch…you probably have the few spices it needs, and then either buy a pack of shredded carrots or grate some whole ones yourself, and then chop up some celery and green onions.

Now there’s a chance you don’t have a bottle of Frank’s Original Hot Sauce on hand…if not, add it to your grocery list immediately! It’s very paleo friendly and you’ll no doubt be splashing it on all kinds of things like meats, salads, eggs – Frank’s great to have around.

And that’s about it. Super simple. Just mix everything together and enjoy this buffalo chicken however you want.

I’ve had it just on a bed of lettuce, as a wrap (try this one inside my Paleo Tortillas!), and piled high on a fresh avocado – there are endless ways to serve this one. Heck it’s so good you may wind up eating it straight out of the mixing bowl like my hubby.

Whatever you come up with, I think you’re really going to enjoy the creaminess of the mayo paired with the spicy hot sauce that gives this paleo buffalo chicken its special little zip.

And it’s not just for lunch by the way…this buffalo chicken can be an easy weeknight paleo meal when you’re hungry and don’t feel like dragging out the pots and pans.

Ingredients

    Buffalo Sauce
  • 1 cup of paleo-approved mayonnaise – whip up our Paleo Mayo or go with your favorite
  • 2 tsp of dried parsley
  • 1 tsp dried dill
  • 1/2 tsp garlic powder
  • Salt and pepper to taste
  • 1/4 cup Frank's Hot Sauce (original version, not the flavored ones)
  • Chicken
  • 3 cups of shredded cooked chicken (we used a pre-cooked rotisserie chicken)
  • Veggies
  • 3/4 cup shredded carrots
  • 3/4 cup chopped celery
  • 3 green onions, chopped

Instructions

  1. In a medium bowl, add the shredded chicken and chopped vegetables
  2. Next add in the buffalo sauce...about 1/2 cup at a time and mix it around until you get the consistency you want
  3. Spoon it on a pitted avocado half, scoop it on top of a bed of lettuce, or wrap a lettuce leaf or a Paleo Tortilla around it

  2. This recipe is delicious! I didn’t have an egg to make the mayo so I just left the mayo out all together and used an avocado instead. So yummy!

  4. FYI… most rotisserie chickens have flour on them so if you are gluten intolerant you will need to watch out for this.
