Easy Strawberry-Banana Non-Dairy Ice Cream

Strawberries and bananas come together in a great-tasting paleo-approved ice cream recipe made without dairy or refined sugars. 

This light and refreshing ice-cream is quick and easy to make – perfect for a simple and healthy treat made with fresh fruit any time of the year. Kids will love it – and you may not need to add any sweetener.

The raw honey is optional…once you mash up your bananas and strawberries and pour in the coconut milk, taste your ice cream mixture then decide if you want to add a tablespoon or two of honey.

No Ice Cream Maker? No Problem!

You can easily skip the modern appliance and go really low-tech with this recipe.

Here’s the easy way to make paleo ice cream without an ice cream maker:

Mix all the ice cream ingredients together as outlined in the recipe below. Then pour the mixture into a deep mixing bowl that has been pre-chilled in your freezer. Give the mixture a good stir, and return the bowl to the freezer.

Set your egg timer for 30 minutes…when time’s up, pull out the bowl, give the mixture a vigorous stir with a spatula or whip it good with a sturdy whisk – you want to get some air in there if possible – then return the bowl to the freezer. Repeat this process every 30 minutes until your paleo ice cream thickens – it may take 2-3 hours to reach a pretty sturdy consistency.

If you’ll be enjoying your ice cream later, pack it up in freezer-safe containers with lids and store in your freezer.

Yield: Makes about 1.5 pints

Strawberry Banana Paleo Ice Cream Recipe

Ingredients

  • 1 can full-fat coconut milk
  • 1 cup of fresh strawberries, chopped into small pieces
  • 1 banana, mashed
  • 1 tsp pure vanilla extract
  • 2 Tbsp raw honey – optional depending on the sweetness of your fruit. See instructions below

Instructions

  1. Place strawberries and banana in a mixing bowl and mash together to combine
  2. Next add coconut milk to the mixing bowl and stir well
  3. Taste mixture – depending on the sweetness of your fruit, you may want to add 1 or 2 tablespoons of honey
  4. Pour mixing bowl contents into an electric ice cream maker and churn until desired consistency is reached
  5. Pack in ice cream containers and freeze until ready to serve

Notes

It makes it a little easier if you keep a can of coconut milk in your fridge. The ice cream will thicken quicker with cold coconut milk!
