Speaking of Nuts…

So this new client walks into our office today. Seemed like a nice lady – mid 40s I’d say. Our get-acquainted conversation started off harmlessly with some idle chit-chat.

Then somehow we started talking about growing older and how it gets harder to keep yourself healthy and stay in shape. No argument from me there.

Then out of the blue she asks if I’d heard of that new “stupid” diet – what’s it called? – oh yeah, the Paleo diet?

As everyone around the office knows, I’m pretty passionate about Paleo. So I’m thinking, is this a joke? Have the docs I work with set me up for one of their pranks? She went on to say, “Yeah, it’s a no sugar, no grain, no processed food diet.”

So I ask her, “Did you do any research? Have you tried it?” She snapped back, “Nah, I just know it won’t work. Besides, who has time for that crap? When you have a family it’s totally unrealistic to think you can eat that way.” [av_sidebar widget_area=’Lockerdome’ av_uid=’av-34wwe3′]

Did I mention I’m in a sales position for an orthodontist office? I was biting my tongue the whole time.

Our little exchange got me thinking about all those I’ve run into who are just naive or downright misinformed about the Paleo lifestyle.

Granted, Paleo isn’t for everyone. But I also believe if healthy living is a priority, you will find a way to make it work.

I know firsthand the benefits of Paleo. I’m allergy-free for the first time in 12 years. No more antihistamines for me. Plus I have zero digestive issues now – that’s huge. I feel better, sleep better, and have more energy.

I routinely rattle off my Paleo experiences to curious people over and over again. For me and hubby, it’s worth the extra effort to be healthy. Plus we eat awesome food.

The ironic thing is, the people who have serious doubts about the Paleo lifestyle are those that look up from their fast food meal and say, “Wow, what are you eating? That looks so good!”

Well that’s because it is good. Paleo isn’t about sacrificing flavor. Ever. The only sacrifice is the time it takes to plan ahead, shop for the stuff you need, and prepare it.

I know it’s hard for families with kids. Mac and cheese is so much easier. But you can do it. And is there any better gift you can give your children than setting them up for a healthier lifestyle?

Anyways, that lady kind of ticked me off. People should really know what they’re talking about before they give their opinion. Ignorance just makes you look silly. Enough said…I’m moving on now.

I’m excited about hanging out with my girlfriends in Palm Springs in exactly one month. They will eat Paleo and love it because I say it’s good and that’s enough for them. That’s why I love them.  These girls are smart cookies. Or really yummy Paleo banana nut chocolate chip muffins. FYI, my girls are muffins, not muffin tops. :) Here’s the recipe…

Banana Nut Chocolate Chip Muffins Recipe

Banana Nut Chocolate Chip Muffins Recipe

Ingredients

  • 2 ripe bananas
  • 1 1/2 cups almond flour
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 1 tsp vanilla
  • Pinch of salt
  • 2 eggs, whisked
  • 1/4 cup coconut oil, melted
  • 1/3 cup pecans or walnuts, chopped
  • 1 or 2 tbs raw honey, depending on how ripe your bananas are and how sweet you like your muffins
  • 1/2 cup dark mini chocolate chips (I used Enjoy Life brand)

Instructions

  1. In a small bowl smash the bananas
  2. Next add the eggs, vanilla, coconut oil and honey to the bananas and stir until combined
  3. In a larger bowl, combine all the dry ingredients (almond flour, baking soda, salt and cinnamon)
  4. Pour the wet ingredients into the dry mixture bowl – stir into a batter
  5. Next add the chocolate chips and chopped nuts and stir well (save a couple of tablespoons of the nuts to top the muffins)
  6. Pour batter into a muffin tin lined with baking cups – fill each cup about 3/4 full
  7. Sprinkle remaining nuts on top of muffins and place in oven
  8. Bake at 350º F for about 22-25 minutes (oven times and temperatures will vary – test doneness by inserting a toothpick, if it comes out clean, they're done)
  9. Store covered in fridge, or you can freeze these to enjoy later

  1. Almost 3 weeks of no sugar no carbs other than fruit and veggies. Tried the banana bread with almond flour and it was out of this world. Was so excited to start my day with it. Can’t wait to see how I feel in 3 months.

  3. I’m pretty proud of these muffins. Even if you’re not Paleo, there is no refined sugar (1 or 2 tbs honey if you want) and no refined flour. It’s almond flour which is basically ground up almonds. You’re body will be happy with this treat. :)
