Today I have a hearty and delicious slow cooker paleo beef stew recipe for you to try – and you can thank my husband for this one…

whole30 compliant recipe markI like my hubby. A lot. He’s my biggest cheerleader and the other half of Paleo Newbie. He photographs the dishes and does all of the website techy stuff that I suck at. And he’s easy on the eyes, but I digress…

The point is he’s a meat and potatoes Midwestern kind of guy. So it’s no surprise he’s bugged me off and on to come up with a good stew for as long as we’ve been paleo. So yesterday, over a year and a half later, he finally got his wish – mostly.  There’s no spuds for the stud in this recipe…but the funny thing is he never even noticed because this stew was so good!

I’ve got to admit, I’m not a real big stew person. But when I sat down with a bowl of this stuff, I amazed myself by downing the whole thing. It was a savory delight! I especially like the seasonings and rustic flavors of this stew.

Gotta love slow cooker recipes like this stew…throw everything in and it’s on auto pilot until dinnertime!

This recipe has a nice mix of carrots, mushrooms and chuck roast. You can of course add any kind of sweet potatoes you like to this paleo recipe – I just decided not to throw them into the pot this time because they do tend to get a bit soft for my taste after simmering for 6 hours. But hey, that’s just me – feel free to add potatoes or any other stew veggies you like into this healthy dish. [av_sidebar widget_area=’Lockerdome’ av_uid=’av-2e6fjl’]

This stew is ideal for a wonderful, lazy Sunday meal…loaded with all kinds of yummy flavors. And it’s so easy to make this classic comfort food dish – just chop the veggies, cube the meat, throw it all in the pot with the broth, wine and seasonings…and you can just set it and forget it. Gotta love that!

So get out your high-tech slow cooker like our Ninja, or your vintage Rival crock pot and get an early taste of fall with every heaping spoonful of this beefy paleo stew!

Enjoy. :)

I am going to try this recipe with NoMato sauce and without the pepper.. since I have eliminated Nightshades from my Diet. I am excited to see how it turns out!

  2. Although this recipe looks great, it is not Whole 30 compliant. The red wine and potentially the beef broth (unless it is made yourself without sugar) are not allowed on Whole 30.

    1. The wine is an option. You can sub with broth for Whole30. You can easily find broths available at the grocery store that do not have sugar and are Whole30 complaint.

  3. Trina,
Thank you for the recipe! My husband and I loved it! It will be added to our recipe book.

    1. Yay! Thank you Courtney!

  4. Just made this and OMG it’s so good. I removed the onions and garlic because I unfortunately cannot tolerate them and replaced the mushrooms with baby potatoes cut in half. Placed everything in the crockpot on low for 6 hours and bam. It was an all around win in this house tonight :) Can’t wait for the leftovers tomorrow!

    1. Thank you Catherine! I love how you adapted the recipe to your needs. I’m sure many will find it helpful as well. I’m so happy you all enjoyed the recipe. :)

Making this now and it smells so amazing!! Thank you for sharing! :) I made potatoes on the side just in case my husband wants a carb. Thanks again!

  6. Making this recipe right now! Can’t wait!!!

  7. Hi there. I am in the middle of a Whole 30 and dying to have some stew. Addicted to your chili so thought I’d try this. I’m wondering if anyone tried the AV to replace the red wine? Or tried something else that worked. I don’t want to ruin my stew if someone has already been successful with a substitute. Thanks!

  8. Made it. Ate it. Loved Loved Loved it. :)

    1. Yay Julie! xo :)

  9. Can’t wait to try this recipe out! If I use fresh tomatoes to substitute for tomatoes, would it work the same way? Also I’m planning to add potatoes to it, in terms of timing, I think it requires more cooking time than the carrots?

    1. Hi Allison, the tomato paste is a thickener for the “sauce”. And I think if your throw in chopped potatoes the cooking time will be the same. :)

  10. I doubled the recipe, would that change my cooking time in your opinion. BTW…it smells so good!!!

    1. Hi Laura, Maybe cook a bit longer. Just make sure the meat and veggies are tender. I hope you enjoy the recipe! :)

  11. Looks so yummy! How would it be affected if I left out the tomato paste? I have a tomato allergy, so finding a quality stew recipe has been a challenge.

    1. Melissa, That is a tough one. The tomato paste acts as a thickener for the sauce, and gives it a more rich flavor. If you search tomato free stew recipes, you will see several listed. That would be where I would start.

    2. I’m terribly allergic to tomatoes. I discovered canned pumpkin works very well as a substitute for tomato paste in stew recipes!

      1. Great idea! :) Thank you!

  12. Hi there, was wondering if this dish could be made without the slow cooker. It looks amazing!!!

    1. Katie, for sure! Just cook it low and slow in a soup pot on the stove! ;)

  13. HI, can’t wait to make this! Not a fan of red wine, has anyone used ACV (apple cider vinegar) instead? Thanks!

    1. I haven’t made it that way Terri…but seems like the cider vinegar would work. If you try it please let me know how it turns out! :)

      1. Thanks Trina! I will let you know…:) btw, I love your recipes!

        1. Thanks Terri! xo You’re a sweetie! :)

  14. We are trying out this recipe this afternoon. No red wine though, so used more broth. It smelled delicious before we turned the slow cooker on.

    1. Oh good…the wine just adds a little different flavor, but the extra broth should work out just fine. Hope you enjoy! Thanks for your comment :)

  15. I am new here so i literally just went out and bought the ingredients to give it a go! I have PCOS, and was advised by a friend that this was the best diet to go for the help control my PCOS! So i am giving it a go to see how it goes! My only problem is the cooking of the actual food i do 13 hour shifts so i make in bulk on one day and will freeze the rest for lunches at work over the month i think.

    1. Hi Katie, you will find making meals in bulk while living the Paleo lifestyle is a good way to go no matter how much time you have. It takes a lot of time to make quality food and most of us do just as you said. Make and freeze meals weekly. It takes about a month, but once you have a bunch of frozen go to meals it makes it a bit easier! Good luck! :)

    what kind of red wine?

    1. Any red wine you would drink. If it doesn’t taste good enough to drink, don’t cook with it. That’s my rule.:) That being said it doesn’t have to be expensive.

  17. I did this stew in the pressure cooker in 1hr. It was amazing. I browned the meet and onion and added cellery as I had some I needed to use as well as sweet potato. I also doubled the wine and broth amounts. Cannot wait to make this again. My husband said its one of his new favourite paleo meals and he is hard to please ;)

    1. Nice Leticia! Way to show the hubby a great paleo meal! Great point for pressure cooker people, add more liquid. And also thank you for taking time to let me know you like the recipe! :)

  18. This was a wonderful recipe. Flavors were spot on. I found it to be a little too oily for my taste. Any recommendations to cut down the greasy taste/oily mouth feel?

    1. Hi Rachel, It might have been your cut of meat. You can trim off extra fat before you cook or go with a slightly leaner cut of meat if that is your preference! Thank you! :)

  19. Aiden Rylee says:

This sounds amazing! How large your is your crockpot? I have a smaller one and I want to make sure I can fit this in mine or if I need to cut it down. :)

    1. Mine is pretty big, but this wasn’t a huge piece of meat. It should be fine is a standard crockpot.

      1. Aiden Rylee says:

        Ok, Thanks!

  20. I am trying to cook Paleo because my kids are changing their lifestyle. I made this stew but treated it like a pot roast instead of cutting the meat into cubes (lazy moment!). My family and I were so impressed with this recipe that I can’t wait to make it again! I browned the roast in coconut oil and rubbed the spices on the meat. I browned the onion, mushrooms and garlic in the same skillet. Threw it in the crock pot, adjusting the time to whenever it was fork tender. Super yummy! Thank you so much! We are so motivated now and can’t wait to try the other recipes.

    1. Wow, and yum Janet! Your family sounds like they are on the right track! I’m so happy everyone likes the recipe. I hope you find more tasty meals here you can all enjoy! :) Thank you for your comment!

  21. can you freeze servings for later?

    1. You sure can! :)

    2. I froze leftovers and it tasted even better the second time around!

      1. Thank you Maria. Good info for people planning their meals! :) I’m glad you enjoyed the recipe!

  22. I made a good stew using potatoes but i started it on a sat afternoon and added the potatoes somewhat later on. Also I did one for 8hrs while I slept I put the veggies on the bottom then the meet and potatoes on the top, also cut them to be just a little larger and they came out great.

  23. This was delicious on a cold night after a 7 mile hike! My husband had it ready to go for me. Delicious flavor, but he went a little too heavy on the red pepper flakes. haha.

    1. Kelly, You have an awesome hubby! :) I’m so glad you like the stew. Perfect for cold days like you said! Happy Thanksgiving and thanks for taking the time to comment. :)

  24. Chuck Christianson says:

Excellent Stew recipe! Tasted better next day.

    1. Thanks Chuck! I think all slow cooked meals taste better the next day. Thats why it’s always one of my favorite leftovers. :)

  25. If we dont have red wine on hand, what could we substitue with? 1/2 cup more beef broth/?

    1. Yes, but it really adds to the flavor. :)
