Slow Cooker Paleo Beef Stew

Today I have a hearty and delicious slow cooker paleo beef stew recipe for you to try – and you can thank my husband for this one… 

whole30 compliant recipe markI like my hubby. A lot. He’s my biggest cheerleader and the other half of Paleo Newbie. He photographs the dishes and does all of the website techy stuff that I suck at. And he’s easy on the eyes, but I digress…

The point is he’s a meat and potatoes Midwestern kind of guy. So it’s no surprise he’s bugged me off and on to come up with a good stew for as long as we’ve been paleo. So yesterday, over a year and a half later, he finally got his wish – mostly.  There’s no spuds for the stud in this recipe…but the funny thing is he never even noticed because this stew was so good!

I’ve got to admit, I’m not a real big stew person. But when I sat down with a bowl of this stuff, I amazed myself by downing the whole thing. It was a savory delight! I especially like the seasonings and rustic flavors of this stew.

Gotta love slow cooker recipes like this stew…throw everything in and it’s on auto pilot until dinnertime!

This recipe has a nice mix of carrots, mushrooms and chuck roast. You can of course add any kind of sweet potatoes you like to this paleo recipe – I just decided not to throw them into the pot this time because they do tend to get a bit soft for my taste after simmering for 6 hours. But hey, that’s just me – feel free to add potatoes or any other stew veggies you like into this healthy dish. 

This stew is ideal for a wonderful, lazy Sunday meal…loaded with all kinds of yummy flavors. And it’s so easy to make this classic comfort food dish – just chop the veggies, cube the meat, throw it all in the pot with the broth, wine and seasonings…and you can just set it and forget it. Gotta love that!

So get out your high-tech slow cooker like our Ninja, or your vintage Rival crock pot and get an early taste of fall with every heaping spoonful of this beefy paleo stew!

Slow Cooker Paleo Beef Stew Recipe

Yield: About 6 healthy servings

Slow Cooker Paleo Beef Stew Recipe

Ingredients

  • 1 tsp salt
  • 1 tsp black pepper
  • 2 1/2 lbs boneless beef chuck roast, cut into 1" cubes
  • 1/2 cup red wine
  • 1 cup beef broth
  • 3 Tbsp tomato paste
  • 1 yellow onion, diced
  • 2 cups sliced mushrooms
  • 3 carrots, chopped
  • 1 tsp dried rosemary
  • 1 tsp dried thyme
  • 2 whole bay leaves
  • 1/3 cup fresh Italian parsley, minced
  • 3-4 garlic cloves, minced or pressed
  • 1 healthy pinch of red pepper flakes

Instructions

  1. Cut beef into 1-inch pieces and season with salt and pepper. Place in slow cooker.
  2. In a small bowl whisk tomato paste into the beef broth. Pour over beef along with the wine.
  3. Add carrots, onion and mushrooms along with garlic and remaining seasonings.
  4. Give the ingredients a good stir, cover and cook on low 4-6 hours or on high 2-3 hours. It's done when the meat is cooked through and the veggies are tender. Remove bay leaves before serving. Garnish with fresh parsley if desired.

    Just made this and OMG it’s so good. I removed the onions and garlic because I unfortunately cannot tolerate them and replaced the mushrooms with baby potatoes cut in half. Placed everything in the crockpot on low for 6 hours and bam. It was an all around win in this house tonight 🙂 Can’t wait for the leftovers tomorrow!

    Hi there. I am in the middle of a Whole 30 and dying to have some stew. Addicted to your chili so thought I’d try this. I’m wondering if anyone tried the AV to replace the red wine? Or tried something else that worked. I don’t want to ruin my stew if someone has already been successful with a substitute. Thanks!

    Can’t wait to try this recipe out! If I use fresh tomatoes to substitute for tomatoes, would it work the same way? Also I’m planning to add potatoes to it, in terms of timing, I think it requires more cooking time than the carrots?

    Looks so yummy! How would it be affected if I left out the tomato paste? I have a tomato allergy, so finding a quality stew recipe has been a challenge.

    We are trying out this recipe this afternoon. No red wine though, so used more broth. It smelled delicious before we turned the slow cooker on.

    I am new here so i literally just went out and bought the ingredients to give it a go! I have PCOS, and was advised by a friend that this was the best diet to go for the help control my PCOS! So i am giving it a go to see how it goes! My only problem is the cooking of the actual food i do 13 hour shifts so i make in bulk on one day and will freeze the rest for lunches at work over the month i think.

      Hi Katie, you will find making meals in bulk while living the Paleo lifestyle is a good way to go no matter how much time you have. It takes a lot of time to make quality food and most of us do just as you said. Make and freeze meals weekly. It takes about a month, but once you have a bunch of frozen go to meals it makes it a bit easier! Good luck! 🙂

      Any red wine you would drink. If it doesn’t taste good enough to drink, don’t cook with it. That’s my rule.:) That being said it doesn’t have to be expensive.

    I did this stew in the pressure cooker in 1hr. It was amazing. I browned the meet and onion and added cellery as I had some I needed to use as well as sweet potato. I also doubled the wine and broth amounts. Cannot wait to make this again. My husband said its one of his new favourite paleo meals and he is hard to please 😉

    This was a wonderful recipe. Flavors were spot on. I found it to be a little too oily for my taste. Any recommendations to cut down the greasy taste/oily mouth feel?

      Hi Rachel, It might have been your cut of meat. You can trim off extra fat before you cook or go with a slightly leaner cut of meat if that is your preference! Thank you! 🙂

    I am trying to cook Paleo because my kids are changing their lifestyle. I made this stew but treated it like a pot roast instead of cutting the meat into cubes (lazy moment!). My family and I were so impressed with this recipe that I can’t wait to make it again! I browned the roast in coconut oil and rubbed the spices on the meat. I browned the onion, mushrooms and garlic in the same skillet. Threw it in the crock pot, adjusting the time to whenever it was fork tender. Super yummy! Thank you so much! We are so motivated now and can’t wait to try the other recipes.

    I made a good stew using potatoes but i started it on a sat afternoon and added the potatoes somewhat later on. Also I did one for 8hrs while I slept I put the veggies on the bottom then the meet and potatoes on the top, also cut them to be just a little larger and they came out great.
