Saucy Beef & Bacon BBQ Meatballs with Sweet Potato Fries

Today’s special is for the boys – beefy paleo meatballs with bacon, all smothered in tangy barbecue sauce and served bar food style in a basket of hot sweet potato fries – grab a fork guys and dig in! 

Actually anyone with a man-sized appetite for a savory and saucy meal is going to love this casual combo of roadhouse rounders and fries – the kids will be all over this one I’m sure.

These all-paleo beef meatballs are loaded up with savory goodness including chopped bacon. Great by themselves, or douse them in barbecue sauce for this recipe!

The meatballs (the recipe makes about 20) are loaded with bacon and they get rolled around a hot pan of bacon drippings for a light browning before they’re finished off in the oven.

In the true spirit of casual bar food, I’ve made this one a really easy paleo and gluten-free recipe to pull off.

The sweet potato fries are super simple to make, but you can also serve the meatballs and sauce over a baked sweet potato if you want to save yourself some chopping time.

The sweet potato fries are super simple. Just slice, drizzle with olive oil, season and bake. OR…you can serve the meatballs and sauce in a hot baked sweet potato if you want to make this recipe even easier!

Just a few helpful tips from the kitchen:

• I grated an onion to give the meatballs a little extra flavor, but you can just dice your onion small if you prefer. Just remember to freeze your onion first or you will be crying your eyes out like I did!

• When you’re hand mixing the meatballs, don’t overdo it – a lighter touch is best. Too much squeezing and compacting can result in meatballs that might be a little firmer than you’d like.Meatballs-cooked-on-parchment-850x600

• If you’re doing the sweet potato fries, you can bake both the meatballs and fries in the oven at the same time on different racks. Just remember the meatballs will be ready in about 20 minutes, while the fries will take a little longer – around 25-30 minutes.

• I’d recommend my Tangy Paleo Barbecue Sauce to go along with this recipe – it’s really easy to whip together and you can make it ahead of time if you like – but feel free to use your favorite pre-made paleo BBQ sauce. [av_sidebar widget_area=’Lockerdome’ av_uid=’av-13071′]

Got leftovers? You can add these savory meatballs to other paleo dishes, or simply reheat and eat them by themselves. You can pop them in your lunch, have a couple with breakfast, or even chomp on them for a quick snack. I bet the kids would love these in their lunch bag with fresh fruit and veggies.

Yield: Serves about 4

Saucy Beef & Bacon BBQ Meatballs with Sweet Potato Fries Recipe

Ingredients

    Meatballs
  • 1 lb grass-fed ground beef
  • 1/3 cup onion – grated or diced small
  • 1/4 cup flat leaf parsley – chopped
  • 1 egg – whisked
  • 1/3 cup almond flour
  • 8 slices of cooked bacon – chopped (reserve bacon drippings)
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • Sweet Potato Fries
  • 2 large sweet potatoes – peeled and sliced
  • Olive oil
  • Salt & pepper to taste
  • Barbecue Sauce
  • Recommended: Tangy Paleo BBQ Sauce

Instructions

    Meatballs
  1. Fry 8 slices of bacon, blot with paper towel, and set aside – leave the bacon fat in the pan!
  2. Add all meatball ingredients to a medium-size bowl and combine gently by hand – don't over mix
  3. Gently form mixture into about 1 1/2" meatballs – you should have about 20
  4. Return the frying pan with the bacon fat to the burner and heat to medium
  5. Lightly brown the meatballs – do not cook through! Brown the meatballs in 2 or 3 groups to avoid overcrowding the pan
  6. Set browned meatballs on a parchment-lined cookie sheet
  7. Meatballs and fries can be cooked at the same time on different racks
  8. Bake meatballs at 425º F for about 20 minutes, or until cooked through
  9. Sweet Potato Fries
  10. Peel and slice sweet potatoes
  11. Place slices in bowl and drizzle with oilve oil
  12. Season in bowl with salt and pepper
  13. Place on parchment-lined cookie sheet
  14. Fries and meatballs can both be cooked at the same time in the oven on different racks
  15. Bake fries at 425º F for about 25-30 minutes, or until cooked through and fries are tender
  16. Barbecue Sauce
  17. Follow the instructions here: Tangy Paleo BBQ Sauce, or use your favorite pre-made sauce
  18. Suggested Plating
  19. Place 3-5 meatballs on top of a big scoop of sweet potato fries
  20. Generously spoon warm barbecue sauce over everything
  21. Dig in and enjoy!
