Quick Shrimp Tostada Bites

Ok now it’s a party…whip up these simple but showy gluten-free shrimp bites and you’ve got the ultimate appetizer for your next get-together.

These take just minutes to prepare…

All you’re really doing is running some shrimp around a hot skillet – for the rest you’re just grabbing some pre-made guac, salsa and a bag of gluten-free chips.

And let me tell you these little beauties are the bomb. One-bite wonders that are savory, a little spicy, and come with a nice salty crunch from the tortilla chip.

The perfect gluten-free appetizer that’s super simple to crank out when you’ve got a crowd you want to wow. Or, these shrimp tostada bites make a great snack when you just want a party in your mouth!

Quick Shrimp Tostada Bites

Ingredients

  • 1 pound shrimp, peeled and deveined
  • 2 Tbsp ghee or olive oil
  • 2-3 tsp Chipotle Seasoning Mix
  • Tortilla chips (we used gluten-free)
  • Pre-made Guacamole
  • Pico de Gallo or similar salsa
  • Lime juice
  • Fresh cilantro, chopped

Instructions

  1. Clean shrimp and pat dry. Season with Chipotle Seasoning Mix plus salt & pepper to taste
  2. Heat ghee or olive oil in a large skillet over medium heat. When hot, add shrimp and cook just until opaque – about 2-3 minutes per side. (Sprinkle with more Chipotle Seasoning Mix while cooking if desired.) Remove shrimp, lightly sprinkle with lime juice, and set aside.
  3. Add a dollop of guacamole to each chip, then a spoonful of salsa, and finally top with a shrimp. Garnish with fresh cilantro. Serve with lime wedges for extra flavor. Enjoy!

  2. I’m curious, are you considering tortilla chips, gluten free or otherwise, paleo. I’ve just started out with paleo, and I read so many different opinions. I understood that grains were not considered paleo. I’d love to get your input on this. Thank you.

    1. Lisa, you are correct. I am 90% paleo. Sometimes I make an allowance for something like a Gluten free chip. This recipe can also me used on a sweet potato chip and they’re awesome! It’s rare that I post any recipe that is not 100% paleo. In fact, I think this is the only one. :)

I just starting dating an amazing man in Portland, and although there’s many things to love about him, one of the biggest things is he eats Paleo!
