Piña Colada, You Know You Wanna!

I’m so confused! Right now I have these wonderful aromas of fall swirling around in my kitchen. The calendar says it’s fall. But here’s the problem…

It’s 97 degrees outside today. That’s Arizona for you. So what’s a girl to do? I’m sweating in the kitchen trying to create some awesome fall paleo recipes for you, and I’m craving a cool, refreshing, relax-on-the-beach kind of smoothie. It’s just enough to confuse my already crazy head.

So what did I do? I put the world on pause and made a smoothie of course.  I just stepped away from the stove and created this heat-beating, dairy-free piña colada flavored treat with leftover pineapple I had in the fridge. Cooled me right off and made me feel like summer in fall. Crazy right? I can’t wait for the cool temps so I can screw my head on straight again.

I hope you enjoy this flavor-packed smoothie. Add some protein powder if you’re coming home from an awesome workout. Or if you’re feeling frisky today – or just seasonally-challenged like me – add a shot of rum.

Piña Colada Smoothie Recipe

Ingredients

  • 3/4 cup of full fat coconut milk
  • 1/2 cup of chopped pineapple
  • 1 banana
  • 1/2 tsp. pure vanilla
  • 1/2 tsp cinnamon
  • 1 tbs raw honey
  • Ice
  • Optional: Scoop of protein powder or shot of rum

Instructions

  1. Place all ingredients in a kitchen blender
  2. Blend until creamy
  3. Insert straw and enjoy

  1. Any veggies I could sneak in that wouldn’t mess up the taste and make it more filling?

    1. I’m pretty sure you could sneak in some spinach. Although it will turn green for sure!

  2. Trina, that sound simply amazing with and without the rum! Do you think making it with coconut cream concentrate would make it too thick or could add some coconut milk. Thanks!

    1. I think the cream may be a bit rich, but try it out. Coconut milk always works for me. :)
