If you’re like me, you probably indulged in a few things that weren’t exactly paleo during the holidays…
Hey that’s okay. We had fun with family and friends and hope you did too.
Now it’s time to start redeeming ourselves and get back on track with our good eating habits.
First up for the new year…a new recipe for a super easy and light winter salad. Clean and nutritious, I think you’re going to like this one.
I got the inspiration for it from a local restaurant. Their version wasn’t paleo, so I changed it up a bit with fresh ingredients and fall flavors.
I think it’s the maple vinaigrette I love most about this one. It really pulls everything together – just wait ’til you taste it. It goes especially well with the berries, apple and bacon. We had this for lunch yesterday, and wow did it hit the spot!
It’s a great lunch that you can make ahead of time and enjoy for a couple of meals. We used leftover turkey in the salad, but you can just as easily toss this one together with shredded chicken.
It’s delicious and wholesome paleo food that’s fast and easy. And that’s how we like it, right?
