Paleo Sweet Potato Waffles

You’ve heard of chicken and waffles? Well I’ve got an even tastier idea for you just in time for Thanksgiving – leftovers using this new paleo sweet potato waffles recipe. 

First off, these sweet potato waffles are the bomb…if I do say so myself. Really proud of them. Hope you like them too!

I’m not a fan of heavy, dense waffles. That’s why I’ve never EVER posted a paleo waffle recipe until now.

I like my waffles light so I can add fresh fruit or have a little something on the side and not feel overly stuffed. This sweet potato waffle fits the bill perfectly.

And you’ll be thrilled to know this is a super-simple paleo and gluten-free recipe. There’s a little extra step whipping up the egg whites and adding them to the batter, but it only takes a few minutes and it’s worth the effort…that’s what makes these waffles nice and light.

So here’s the little after-Thanksgiving bonus with these…you can use these to make an open-face “sandwich” loaded up with your T-day leftovers. Turkey, stuffing, cranberries – and what the heck, pour the leftover gravy on these too. Pile just about anything on these sweet potato waffles and dig in!

Personally, I can’t wait to serve these post-Thanksgiving to my family. I used to be big on making sliders with leftovers after T-Day, but gave them up when I went paleo. Now I’m excited about starting a new family tradition with these healthy waffles! [av_sidebar widget_area=’Lockerdome’ av_uid=’av-20rrkg’]

Just to try this idea out, we sampled the waffles with roasted turkey and a little (okay maybe a lot) pure maple syrup poured over them. Oh wow these were so good! And I can just imagine what they would be like topped with sautéed apples and cinnamon and then drizzled with maple syrup. Are you hungry yet? My mouth is watering just thinking of the possibilities!

They freeze beautifully too, so feel free to double the recipe to have these on hand for a quick morning breakfast or weekday meal!

Paleo Sweet Potato Waffles Recipe

Yield: Makes 5-7 waffles

Paleo Sweet Potato Waffles Recipe

Ingredients

  • 1 cup of cooked and mashed sweet potato (about 2 potatoes)
  • 1/2 cup almond butter
  • 1 Tbsp coconut flour
  • 3 eggs, separated into yolks and whites
  • 1 tsp pure vanilla extract
  • 1 tsp pumpkin spice
  • 1/2 tsp baking soda
  • 2 Tbsp maple syrup (optional)

Instructions

  1. Preheat your waffle maker
  2. Separate the eggs' yolks and whites. Place egg whites in a small bowl and set aside. Add just the egg yolks to a large mixing bowl
  3. Add the remaining ingredients above (except the egg whites) to the large mixing bowl. Blend at low speed with an electric mixer for about 3 minutes, or mix well by hand. The batter will be thick – don't thin it!
  4. In a separate mixing bowl, beat the egg whites with electric mixer until stiff peaks form
  5. Now gently fold the beaten egg whites into the batter with a spatula
  6. Lightly brush your pre-heated waffle maker grates with coconut oil. (Repeat every time you cook a new batch.)
  7. Spoon batter into the molds and cook until golden.
  8. Serve warm with fresh fruit topping or maple syrup

  2. This turned out a bit disastrous. I used 2 sweet potatoes, and did not measure how much they were when I mashed them. The only thing I can figure is that when you say 2 sweet potatoes, you mean 2 small or 2 medium sweet potatoes. It tasted ok otherwise, but would not stick together in the waffle iron, and made quite a mess.

    1. Jason, The recipe lists 1 cup of sweet potatoes. I don’t know what size a person will be using so i listed 2 so that they wouldn’t be disappointed if once mashed they didn’t have a full cup for the waffles. My guess is, you had too much. Also make sure to grease your waffle iron. I guarantee this is a great recipe! :)

  4. Can you substitute peanut butter for almond butter?

    1. Melissa, I have never made with peanut butter, so I’m not sure how it would work.

  7. This is insanely good. Thank you! This is my 2nd time going paleo and last night I went to bed knowing I was going to attempt sweet potato waffles for breakfast. Those occasional treats make eating this way easier. Even grinding my own almond butter, I thoroughly enjoyed making this recipe. And then eating it! My mom’s in her 70’s and tries every recipe I make. She liked this one.

    Can you give me advice on the coconut oil, please. When I dropped it (solid) to spread it just burns. We ended up using butter.

    1. Hi Veronica…I’m so glad your family enjoyed the waffles! As far as using coconut oil to grease the waffle iron, try melting it first — just pop a little scoop in the microwave first, then brush the melted oil onto the waffle grates. Or like you said, if you don’t mind dairy using butter should work just fine too if the grate isn’t too hot. Thanks again for your lovely comment!

    1. Hi Emily…unfortunately this specific recipe needs eggs to work…wish I had a good alternate for you!

    2. I am allergic to eggs as well. Have you tried using a commercial egg replacer? Or flax meal mixed with warm water? Or apple sauce? These are tricks I use when need to replace eggs in recipes.

  14. What is the best coconut oil to use instead of butter? Any recommendations? Just bought my first bit of it and I like it I just wonder if there are better ones?

    1. You can get virgin coconut oil at costco that’s just fine. Or we also have bought ours at Tropicaltraditions.com. Great coconut oil and products!

    2. I’ve purchased coconut oil in the larger jars, as well as larger jars of their versatile “coconut cream concentrate” (coconut tightly packed), on sale for several years at Tropical Traditions. If you join their mailing list, then they will tell whenever they run sales. They always ship in a timely manner, too. Coconut oil can get expensive if purchasing the smaller jars.
