Paleo Sweet Potato Casserole

Dig into this sweet potato side dish made simple and special with fall spices and the savory flavor of pure maple syrup. 

This whipped sweet potato casserole leaves out the refined sugars including marshmallows and brown sugar. It replaces those with the delightful taste of cinnamon, nutmeg and ginger…plus a little pure maple syrup for added sweetness and extra flavor.

This easy paleo and gluten-free recipe starts with 4 pre-cooked sweet potatoes – make those first, or better yet, the day before to save yourself some time.

The addition of one egg makes every scoop of these sweet potatoes extra light and fluffy. The key is using a hand mixer or stand mixer to get them all nice and creamy for baking. And the sprinkling of chopped pecans or walnuts on top gives this paleo dish a little extra presentation pizzaz and a nice healthy crunch.

Paleo Sweet Potato Casserole Recipe

Yield: About 6 servings

Paleo Sweet Potato Casserole Recipe

Ingredients

  • 2 1/2 to 3 lbs of pre-cooked and mashed sweet potatoes (about 4 medium potatoes)
  • 1/4 cup of raw maple syrup
  • 1 large egg
  • 2 tsp ground cinnamon
  • 1 tsp pure vanilla
  • 1/2 tsp ground nutmeg
  • 1/4 tsp ground ginger
  • 1/4 tsp salt
  • 1/2 cup pecans or walnuts, chopped

Instructions

  1. Preheat oven to 350º F
  2. Grease an 8-inch baking dish with coconut oil
  3. Place the cooked and peeled sweet potatoes in a mixing bowl and mash
  4. Add in the maple syrup, egg, cinnamon, nutmeg, ginger and salt
  5. Whip with an electric hand or stand mixer until creamy
  6. Spoon out the mixture to form an even layer inside your greased baking dish
  7. Sprinkle with nuts (pecans or walnuts)
  8. Bake until slightly golden around the edges – about 30-40 minutes. (Oven temperatures and cooking times may vary)
  9. Serve hot and enjoy!
