Peppermint Chocolate Chip Paleo Ice Cream

Chase away your winter blues with a delicious dish of this bright pink peppermint and chocolate chip dairy-free ice-cream! 

For me, a good frozen dessert is never out of season.

Especially when it’s an easy paleo recipe like this one that tastes so good!

Every bite gives you a nice arctic blast of refreshing peppermint along with the sweetly satisfying crunch of dark chocolate mini-chips.

And in case you’re wondering how I got that nice pink color for this paleo ice cream, here’s the scoop: it’s a tablespoon of beet juice!

But not to worry, you can’t actually taste the beet juice…as my hubby happily declared after he polished off his bowl. And feel free to skip the coloring if you want…the ice cream will taste exactly the same without it.

You can also easily adjust this recipe to suit your taste by putting more or less peppermint and honey in it…see the recipe below for guidance.

Peppermint Chocolate Chip Non-Dairy Ice Cream

Yield: Makes about 1.5 pints

Peppermint Chocolate Chip Non-Dairy Ice Cream

Ingredients

  • 1 can (13.5 oz) of full-fat coconut milk
  • 1/4 to 1/3 cup raw honey
  • 1 tsp pure vanilla extract
  • 3/4 to 1 tsp peppermint extract
  • 1 tbs beet juice (adds pink color without flavor)
  • 1/3 cup dark mini chocolate chips (I used Enjoy Life® brand)

Instructions

  1. Whisk together all the above ingredients (except chocolate chips) in a bowl
  2. Pour the mixture into an electric ice cream maker and churn
  3. When mixture starts to thicken, add the mini-chocolate chips
  4. When desired consistency is reached, serve immediately or pack into ice cream containers and freeze

Notes

Refrigerate the can of full-fat coconut milk prior to making to reduce churning time
