Paleo Macadamia-Coconut Chocolate Chip Cookies

Enjoy every blissful bite my paleo friend. You deserve it. If for no other reason than the paleo diet isn’t the easiest thing in the world to follow and you need an occasional reward for a job well done.

I don’t post a lot of cookie recipes. After being paleo for 2+ years, I guess I don’t crave sweets as much these days. That’s probably true for most paleo peeps. 

Another reason cookie recipes are a rarity here is I don’t want to share paleo treats that are just OK. You know what I mean – good maybe, but not great.

For me, a new paleo recipe has to be pretty amazing – at least to my taste buds! I’m just not going to share something I don’t think is worth your time and effort to make.

Well I have no doubt this macadamia nut and coconut cookie recipe is easily one of the best paleo cookies to come out of my kitchen.

My inspiration was the paleo macadamia-coconut butter recipe I posted earlier this week. It was so rich and naturally sweet that I just knew I had to come up with one more recipe with the nut butter as the star ingredient.

This one literally came together in minutes. I baked a small test batch of cookies first for taste and timing, loved them, then decided I would take them up a notch with some dark chocolate chips.

You’ll find these are not overly-sweet. I really wanted the macadamia nut and coconut flavors to shine through. To me, these taste like a cross between a macaroon and macadamia nut cookie.

The cookies are firm on the outside with a soft center. They’re not oily or crumbly like some other recipes.

It’s my new favorite paleo cookie. My hubby’s too, surpassing his #1 – the paleo ginger snaps recipe. This little gem is really pulling rank – and just in time for spring!

Paleo Macadamia-Coconut Chocolate Chip Cookies Recipe

Yield: Makes about 15-18 cookies

Paleo Macadamia-Coconut Chocolate Chip Cookies Recipe


    Dry Ingredients:
  • 1 1/3 cup almond flour
  • 1/2 tsp soda
  • 1/4 tsp salt
  • 1 cup unsweetened shredded coconut
  • Wet Ingredients:
  • 1/4 cup raw honey
  • 1/2 cup Paleo Macadamia-Coconut Butter
  • 1 egg, whisked
  • 1 tsp pure vanilla extract
  • Fold In:
  • 1/3 cup dark chocolate chips (Enjoy Life brand recommended)


  1. Make the easy Paleo Macadamia-Coconut Butter first
  2. Preheat your oven to 350º F
  3. Mix all the Dry Ingredients together in a large bowl
  4. In a separate smaller bowl, mix together all the Wet Ingredients
  5. Pour the wet mixture into the bowl with the dry ingredients and mix well
  6. Lightly fold in the chocolate chips
  7. Line a baking sheet with parchment paper
  8. Form heaping teaspoon-sized dollops with a rounded top and place on the parchment-lined cookie sheet
  9. Bake at 350º F for about 8-11 minutes, or until edges turn golden brown (oven temperatures and cooking times always vary – keep a close eye on your cookies!)
  10. Cool slightly, then remove from parchment paper
  11. Store in air-tight container
